The name of the game is SWARM, SWARM! The only way to win is to have too many bodies for Omokk to deal with. The RNG is rather off the charts in this battle, so the more minions you can put on the board, the better for you. This may seem counter-intuitive, but I recommend holding off a couple turns before playing any cards, aside from Noble Sacrifice, until you card drop at least 2 minions, if not 3. (This could be achieved with some of the cards that spit out an extra token minion.) Never play a minion if it's going to be the only one on the board at the end of the turn. It's going to die to Omokk's hero power and you'll have wasted a card. (Exception: You can play Nerubian Egg if you know you can put down at least 2 minions the following turn to try and help protect the 4/4 it produces from Omokk's hero power.) Wait a few turns, make some smart trades, and just whittle him down over time with a board full of small minions and one or two big ones.
