I'm glad it worked so well! I also originally played Aldor Peacekeeper, as it's always been one of my favorite cards and was the first rare I ever crafted, but I also found it just didn't quite have the necessary utility in the meta. And I agree that beating Rez Priest is worth celebrating.
KeRin is right, the best option would be Tirion Fordring. The goal is value and a finisher at the top end. While Tirion doesn't offer the same heal and value, his taunt acts as a pseudo-heal and Ashbringer is a useful weapon.
Shotbot is definitely the best in slot by a pretty large margin, as having a resilient two drop is very helpful in pretty well every matchup, but if you don't have it, you may be able to slot in Air Raid or Micro Mummy. Your aggro matchups will likely suffer, but they should do okay as semi-resilient two drops.
You aren't able to play Kazakus in Paladin, as he's only playable in Warlock, Mage, and Priest, being a tri-class Kabal card from MSG, but the deck looks fun overall!
I haven't played Questing Explorer in this deck at all so I can't say how good it is in my experience, but I definitely appreciate having the one-of Candletaker as an opportunity to play a 3 drop on 3 and progress the quest. I feel they both have the issue of being great on curve and bad later, but I think that Candletaker is slightly better post-quest, and we typically fill out the quest quickly enough that Questing Explorer's consistency is pretty low. We also need to ensure as many power turns in the mid to late game as possible with decks like N'Zoth Priest in the meta, so Candletaker is just a little better for that. But I definitely wouldn't say that Questing is bad, and Candletaker or a copy of Prismatic Lens is probably the most flexible spot to add it.
I think you may want to refine your goal. Currently, you have a lot going on with the deck. It looks like you're largely going for a token/aggro deck, so I'd recommend cutting expensive cards like Jaraxxus and your board clears. This'll make the deck play more consistently in the early game. I think the idea of Expired Merchants with N'zoth in a sticky deathrattle zoo deck looks really fun though!
