If he played cairne first then yes but you if you played windrunner first then no. It's because the deathrattle triggers on the order they are first played
If Sylvanas is killed and her Deathrattle acts prior to the rest of the spell (kill the opposition minion), you might wind up with Cairne even. Otherwise as stated above, it would depend which was played first.
It would be interesting to test it in a game with a friend.

This is correct. Deathrattles trigger in order of when the cards were played. So if you were to play Sylv into his board with Cairne on it, and unwilling sacrificed, you'd get the token. If your Sylv was on the board before he played his Cairne, then your Sylv would trigger before the token came into play and you'd get nothing.
If I have Sylvanas Windrunner and the opponent have Cairne Bloodhoof on the battlefield (only these 2 minions).
If I cast Unwilling Sacrifice on my Sylvanas Windrunner, can I control enemy's Baine Bloodhoof?

Well I'm not sure, but here's my logic:
If Sylvanas is killed and her Deathrattle acts prior to the rest of the spell (kill the opposition minion), you might wind up with Cairne even. Otherwise as stated above, it would depend which was played first.
