Sometimes when I read comments here and on Reddit about the Wild and Standard metas, I find they don't match my experience. For instance, I haven't noticed a dominance of mid-Range Shaman on the EU Standard ladder. It may be the most popular deck, but there still seems to be a lot of variety. I get the feeling the comments come from NA players. Likewise, comments about how easy and fun the Wild ladder is seem to come from EU commentators, because my experience in NA Wild is that it is only easy and fun in the lower ranks. As you approach 10, the ladder is populated by oppressive power decks, most especially Paladins of all flavors, and it becomes a huge grind very quickly. Another difference I've noticed is that if there is one OP deck in a constructed Tavern Brawl, I am much more likely to face that deck in the EU server than the NA server, like 1 out of 2 Dreadsteed Warlocks in EU as opposed to 1 out of 4 Dreadsteed Warlock in NA. Also, I sometimes see a decklist touted as a huge winrate/legendary material, and then find that it is only moderately competitive, and I wonder if that's because of meta differences.
I think most posters here play on the EU server, followed by the Americas server. How much do you think the meta differs between the servers? Would it be interesting for players to specify their server when making comments or posting decklists so we can compare?

This is mostly a result of people blatantly lying in their deck "guides". for reasons which are hard to comprehend.
This is the reason why players always ask for proof. I remember one time it even went so far that some guy posted a supposed 80% winrate deck and the legend proof showed him playing a different class entirely.
General rule of thumb is to disregard all posts claiming a higher than 65% winrate since everything above that is unsustainable. Also I would recommend to look at guides posted at r/competitiveHS. Because they have far more restrictions on posts. (min 100 or 200 gathered game data).
I don't believe that there are any noticeable differences between EU and NA other than there are more players on EU. I do believe that there is a difference between China and the rest and I have noticed it being much more aggressive at one point and much slower at another point. There is also a difference between decks played in Asian tournaments but almost no difference between NA and EU tournaments.
