Ok, first of all for the longest time, all of the deathtouch minions were just terrible. More recently though, tokens and swarm tactics have actually been pushed to a backburner (perhaps except for warloc). We dont have Muster for Battle / Implosion in standard. I also havent seen hunters packing Unleash the Hounds anymore because with less token prevalence it is worse.
With less swarm tactics, I am also seeing potentially less sweepers and more.... Flamewreathed Faceless. Knife Juggler just ate a nerf as well and is less prevalent since then.
What does all this mean? Well, I have been experimenting with Patient Assassin. I dont know if anyone else has put any testing into him since all of the changes but I have found a few cases in which I just turn a shaman's plans upsidown by having a stealthed deathtoucher in play. Has anyone else given any of these deathtouch minions a second glance as we move to bigger minions and less sweepers?
I've seen Pit Viper mentioned as playable recently as well, at least as an aggro minion; a plain 2/1 for 1, but with that upside of potentially trading up massively if you draw it later in the game. Normally not something that's ever going to happen, but yeah, with swarm-style decks being less popular now, the opportunities are growing.
I do think this will shift again over time though, as newer decks start emerging and becoming more refined. There are still some faster decks out there, and more will show up, which in turn will start to lower the opportunities for high value out of deathtouch minions (due to less big minions to trade into, or more board clear/pings being slotted into decks).
i don't know patient assassin was pretty bad before naxx and gvg anyways, that's like the only epic i bothered disenchanting without having 2 ofs, the thing with him is his measly 1hp dying to whirwild effects and making him a dead card against warrior which is a match-up where rogue needs all the help possible , ifhe was a 1/2 he'd be amazing
Blizz needs to fully realize the ability and name it deathtouch as well as adding hexproof (or another variant) for the 'cannot be targeted by spells or hero powers' mechanic. Arguably, it's easier to learn what deathtouch and hexproof mean than reading walls of text on minions. If players can learn deathrattle and windfurry they can learn deathtouch and hexproof.

I have not yet, though you do bring up a good point. One of my favorite decks in MTG was revolved around Phage the Untouchable who had deathtouch
