I thought it would have been awesome to use Master of Disguise on Knife Juggler and have him shoot his daggers from the shadows. Alas, he loses the stealth when he fires ... sigh.
Yeah, many a player have tried this on Ragnaros, the barrel flinger, Imp Master, and Knife Juggler. You lose stealth from using a damaging effect or losing health iirc.
There's other neat things though, like Young Priestess, Cult Master, Murlocs, Swordsmith!

just to correct you a little, Stealth only is broken when you do damage, taking damage does not break stealth.
its a common mistake because of imp master, the fact is imp master deals damage to itself that's why she loses stealth. its not because she takes damage.
as for good combos with stealth would be things that don't attack but have impact on the game. like nat or lorewalker cho, where its almost impossible to kill them because of their high health unless you get lucky and have multiple aoe cards. or alarm-o-bot giving you a pretty much guaranteed free creature next turn. or gruul and questing adventure to have them build up power over the game while the enemy trys to keep a taunt in play to stop that monster from destroying them in one turn.

You're not going crazy, I edit 2~3 times each post
All must fear the barrel flinger
I learned this mechanic the hard way when i tried to be cheeky in Arena, and tried putting stealth on my Imp Master.
