Gentle Megasaur and similar cards offer you one Adapt choice. It is then applied to all eligible targets.

Each Adapt pick is independent, you can get the same options multiple times.

No, Galvadon does not always get Stealth + Windfury. However, it can get them both 64.44% of the time. Volcanosaur can only get them both 16% of the time.

If you need a specific Adapt, you have a 30% chance to be offered it in one try. You have a 51% chance to be offered it in two tries, and an 83% chance to be offered it in 5 tries.

For one specific Adapt, you have 37% of getting it in the first try! It's 1/9 plus 1/8 plus 1/7.

That's not how probability calculation works.

The odds of being offered a specific adaptation is 1-(not offered) = 1-(9/10*8/9*7/8) = 0.3 = 30%
