I currently have 3000 dust to use. I guess what I am looking for is, should I spend my dust on like a Yogg-Saron, N'Zoth, Y'sharj... or should I go for a little older legendary like Sylvanus, or Ysera... OR should I just craft epics and rares towards one single deck. Curious what others do with their dust.
Highly depends on what decks you want to play. Look at a deck you want to make, see what is essential and what is not. Some cards are replaceable (I don't have Malkorok for my Tempo Warrior, so I use Sylvanas), some are not (An N'Zoth Pally will be significantly weaker without, say, Tirion).
From your initial choices of Yogg, N'Zoth, Y'Shaarj, Sylvanas and Ysera, go with Sylvanas Windrunner first. She's sort of the Dr. Boom of Standard where a lot of decks can run her. I hate Yogg, Y'Shaarj only belongs in a very specific deck type, N'Zoth is great but you'd want Sylvanas to go with him. Ysera is nice, but not used frequently these days.
+1 for Sylvanas Windrunner. I think that Ragnaros the Firelord would have been another solid choice for similar reasons - a strong classic neutral legendary that still sees a lot of play.

Sure, cards can still be buffed and nerfed as time goes on, but you can get a full dust refund if that happens and a card becomes effectively unplayable.
I don't always follow that rule, but it's my general guideline for spending dust and it's served me quite well.
we can check how frequently a card is used in hearthpwn decks (if we look at the cards individual page) is there some way we can translate this information into a list of cards that are most used/useful therefore creating a crafting guide for the basic building blocks decks in the current patch?

Strange. For me, since classic cards will always be available, and you get classic cards from tavern brawl and Arena, so IMO I should never ever craft any classic cards, because as time goes on I will be more and more likely to get them.
