Pretty much always.
2) When playing against Paladin, do you hold your Harrison Jones (if he's in your deck ofcourse) for their Ashbringer (that you aren't even completely sure that they are running) when you could have taken out their Truesilver champion or even a Light's Justice after a muster, drawing 3 cards.
Depends if you run silence. If they are good they will hold Tirion until you are nearly at fatigue so you can't Harrison their Ashbringer anyway.
3) Mulliganing against Warlock, how do you decide what to keep, since the optimal cards are different depending if you face zoo, or Handlock?
Always keep Owl if you run it it's good vs both. Always keep Axe because it's so good vs. Zoo. Keep Death's bite against both with the coin or against Handlock regardless.
4) The hardest question I face that comes to mind, not just for CW but seemingly every deck, when and how do you play Sylvanas? I feel like I never play it at the right time, and hardly ever see any value!?
I usually try and play it on curve and not into an obvious chance for them to trade their board into her. I usually prefer to play her than to pass.
All depends on draw. I played control warrior to legend last season and I won way more than I lost vs. Hunter but if you don't draw a weapon by turn 4 you always lose.

If you are not getting to rank 5 fairly easily by 10 or 12 days into the season you are very unlikely to make it. The push from 5 onwards is far harder and takes probably twice as long.

TBK is the best choice today imo - so many druids.
I made legend with Lil' Exorcist which is guaranteed value even vs. control when everyone runs Dr. Boom.

Played about 5 games at rank 2 and ran out of cards in 3 of those games - not consistent enough card draw.

It has some very strong and pretty weak match ups but generally I don't think it is really viable as a top tier deck.
