I don't know about that. I'm at 68% win rate with my quest shaman at rank 7 and currently crushing those decks except for murloc paladin which is quite difficult. I think it depends on the decklists people are using and knowing when to play a tempo or a control game.
thanks for checking out the deck and good stats. over 220 games i have 60% winrate i think you probably had some bad rng/muligans. hunter is one of the best match ups as long as you can compete for the board early. rogue can be annoying cause of how aggressive their tempo can be with an early raiding party and is probably one of the toughest matchs. giants mage, as long as you have equality/shrink ray, is usually an easy match up.
I ran with thalnos for a couple ranks and it was good with conc against druid but that can be quite situational so I would agree and say farseer is a good choice although I think kangor is hard to replace. A doomsayer is a pretty decent choice also
Nozari saves me constantly and I personally wouldn't play without it but you try and see how it goes. If i could put 31 cards in the deck the other would be Zilliax so thats a good choice. Replacing Crystalsmith I would suggest Bloodmage thalnos as it generates more card draw and works with crystology, although Crystalsmith works wonders with flash heal so maybe another healing card. Humility (pyro synergy) or aldor is also a good shout.
I've gone from rank 12-4 with OTK paladin with around 60% win rate and its very viable, can post the decklist if you'd like. (I have 1000+ paladin wins)
