In the case of HS, the cards are virtually worthless once you buy them, because you can't resell them.
If you enjoy this game enough to spend $50 on it, then do it. The cards, however, are still worth $0.00 no matter how much you spend on the game. -

Am I right to keep the Drakes and mulligan the rest? By turn 4 i have a Twilight Drake 4/9 and he has three secrets and Eaglehorn Bow. Should I attack? By turn 5 I was dead from attacking his face into Freezing Trap and Wandering Monster and then a followup Spellstone for four wolves. Any way I could have played this differently?
I'd keep 1x Drake only, you don't need both and you're likely to draw something more useful and/or stronger - also, most hunters are fairly aggresive, you need to have an answer (Hellfire for spellstone, silence and board presence for deathrattles/shaw etc.). The triggering of the secrets was definitely a mistake, your minion could've been given taunt or at least, if you had to, tested freezing trap on your own terms without giving him a completely unharmed 3-drop.
Next game with Evenlock against Paladin. Opening hand is Sunfury Protector, Lesser Amethyst Spellstone and Dread Infernal. Am I right to toss all three? In the end I lost to Leeroy plus Faceless despite being way ahead on board.
I'd keep Sunfury since most paladins are aggro, and you're searching for a giant to taunt (or drake, but it's very vulnerable to silence). Spellstone would probably be a keep if I had something like a Homunculus in hand to activate it (and then have a solution for his Creeper).
Next game, again against Paladin. Opening hand is Lesser Amethyst Spellstone, Spellbreaker, Hellfire and Shroom Brewer. Am I right to toss all except Hellfire? Turns out he is not playing odd paladin for some reason ...
Got turn 3 mountain giant and turn 4 twilight drake. Then he used Tarim to turn them all to 3/3s, trade with a mech egg and get an 8/8 and 3/7 against two 3/3s. How can I counter this?
Here, I'd assume it was Odd Paladin again, and since we're on the Coin, I'd keep Hellfire and spellstone...how did he tarim those favourably on turn 6, what did the giant and drake do during turns 4-5? Was there a taunt in the way, why did the egg survive to get turned into a 3/3? You can play around, and have to play around Tarim whenever it's not an Odd paladin (without Stonehill of course), for example by keeping a strong minion surrounded with weaker ones - don't go 2x giant if it's not necessary, protect it behind a 2-drop like a Homunculus...so when they get Tarimed, at least some might get a stats boost...
It's not easy to give general advice, it all depends on the game situation.

God this brawl...
It just keeps on going and going with FLJs on both sides. The decks aren't even interesting, its just randomised stuff.
