All the Grim Patron warrior decks I've seen use Dread Corsair. Why? What's so good about this card? I only see it playable if you have a weapon, and then again 3 life die to just anything. Am I missing something?
Well, as a warrior, you ALWAYS have weapons. As GP warrior, you are probably using Death's Bite, which makes it free! and if it's free, you have left over mana to play other, more survivable creatures, which get even more survivable because of the pirate's taunt. Really though, I think the only reason he wasn't used SOONER in warrior constructed was that he didn't necessarily fit into the control warrior, especially post naxx.
I think it just fits the deck. You can have a 1 mana 3/3 taunt on turn 2(if you coin Axe on turn 1) or 3 which is going to be great for slowing down aggro decks to make sure you get to your combo and if you don't need to use him to slow down an aggro deck you can use him as cheap charge minion after a Warsong Commander. He even provides some protection for the commander assuming you didn't kill him off.
It's a good tempo play due to the reduced cost with weapons. Also things like:
Turn 4 - Deathsbite + Dread. Kill whatever is on board with face.
Turn 5 - Acolyte + hit minion + Battle Rage = 4 card draw on T5.
Which is just really super strong as draw is hellishly important and you can still have board control depending on what deck / draws the opponent has had.
It works with Warsong and is basically a free taunt in most cases in a aggro heavy meta.

The first mistake the op is making is asking Blizzard why they can't balance this game. Blizz can't balance ANY game, period.
