My question, if I'm interested in climbing ladder, does it make sense to complete the adventures? Do they give cards that I can disenchant for dust? Do they offer cards that are important for some decks?
Aside question: Which deck do you suggest I should play? I mostly enjoy control decks (loved Control Warrior in the old days).

The first wing/the intro to the Frozen Throne gives a legendary card that you can disenchant, I would recommend completing that.
Adventure don’t give cards. They give packs and card backs. Yeah frozen throne gives a card. I am not sure what else is worth it
New Adventures just give packs, not cards but it is better to spend your gold on packs rather than the adventure
I suggest you dont bother and do something productive with your spare time
