No love for Repentance then if you expect your opponent to play a high health minion and you have a 1/1 on board? Priests play high health minions quite a lot.
Well generally redemption is also good to get righteous protector back against aggro... It is very OP on divine shield taunts...
Kodo is usually the best, but sometimes redemption for a murloc is good for synergy.
Noble sacrifice is a safe option most of the time unless opponent is bursting you with spells and hero power. (Which only happens with mages and priests, so don't take noble sacrifice against them unless it is good the very same turn to protect one of your minions or save your face)
Eye for an eye is mostly to counter ice block or when you opponent low on health but you have hard time finishing him off.
Repentance is just to counter decks playing big minions, but usually you never take it unless you expect lich king or some other huge taunt to be played...
can someone please give me advice on how to decide which secret to choose from the ones you discover as i often have a hard time choosing.
There is no right answer, it's completely situational.
If i get Hydrologist early, i normally get Getaway Kodo and just make sure i get either Hydrologist Or Stonehill back.
If i am playing Priest i almost always get Redemption and save it for my Tirion.
Against Aggro i get either Noble Sacrifice to stall or Redemption for my Wickerflame(which frustrates the hell out of them)

I am envoy from nowhere in nowhere. Nobody and nothing have sent me. And though it is impossible I exist. ©Trimutius
