I just tested the interaction between Pyros deathrattle and Da Undatakah. I must say, I am extremely disappointed...
So with the 2 deathrattles from the 2 and 6 mana Pyros "this card" text still refers to Pyros when Da Undatakah gains the deathrattle. The odd part was I only got a 10/10 Pyros back after it died even though it had the 6 mana 6/6 deathrattle as well. I thought I would get the 6 and 10 mana deathrattle at least :/
This is also true for Zerek, Master Cloner. But this is to be expected. Normally, the deathrattles are coded to summon/give you another specific card. Eventhough Pyros says return this, it gives you a different minion with the same name (Lesser Diamond Spellstone summons all 3 version of Pyros, so they aren't the same minion). Really, Pyros's text is more of a flavor text, insinuating that the phoenix rebirths again and again. Same with Zerek, as he makes another clone of himself (summon another zerek, not a copy of this minion).
This actually doesn't make any sense considering Pyros' interaction with Spiritsinger Umbra, since pyros is literally and immediately returned to your hand as the 6/6 version if Umbra is in play. This interaction was changed to be this way back in Un'goro (without Blizzard telling anyone as far as I know) since Pyros + Umbra used to add the 6/6 version to your hand while still keeping the 2/2 version in play. I hope Blizzard will do the same thing here and make the interaction more consistent with the text (which means returning Da Undatakah to your hand as a 6/6 that costs 6 or 10/10 that costs 10 if it gained Pyros' deathrattle). Even if it turns out to be broken, Pyros will rotate after the next expansion anyway and it'd be a shame to miss out on such a cool interaction in my opinion.

Actually, it makes sense now. By having the Pyros deathrattle, the Undatakah returned to your hand and transformed into the 10/10 pyros. That's why you didn't get 2 pyroses. The first deathrattle it gains with his battlecry triggers first, so if it first gained the 6/6 pyros deathrattle, then the 2/2 pyros deathrattle, the 6/6 version triggered first, it transformed into a 10/10 with no text, so the other deathrattles no longer triggered. Thus you have a 10/10 in your hand.
It's just one of those cards where you have to accept, it's just the way it is. Through trial and error, you realize which cards aren't so consistent and you have to live with it. Why? Well, because you don't really have a choice haha.

Not sure we have to nowadays. Blizzard still prefers concise text over accuracy, but they have been far more willing to make things consistent across the cards (though 'consistently bad' is still consistent here). I still remember when they spent several discussions defending Druid of the Claw not having the 'transform' text. Nowadays, they make text/mechanic consistency fixes very willingly.
So it's probably just a matter of someone going up to them and suggesting that pyros/Zerek's text should be changed. All it'll take is just adding their names ("Return Pyros to your hand..." "Resummon Zerek") or else change the spell to have it resummon the original card.
If Blizzard starts defending the status que again then we can think of accepting it, but their recent track record has shown that they are slow as molasses but willing to change.
As far as I know, Pyros is a unique case in that it returns to your hand and then transforms itself into something else. Because of that, the entire Undatakah Deathrattle gets transformed away. Whichever Pyros Deathrattle triggers first is what will cause the transformation and cancel the rest.
The wording is a bit off though, as it does not actually return itself as a 6/6 version of the original Pyros that then costs 6 mana. The 2 mana original Pyros is instead transformed/replaced by the 6 mana version of Pyros, which is a different card. And that same transformation overwrites Da Undatakah.
Pronouns don't make much sense in a game where deathrattles can be copied by other minions. If they mean 'this minion' whatever it happens to be, then say 'the minion' (not 'this' it is ambiguous with the original minion). If they mean a specific minion, then say it (Add a '6/6 Pyros to your hand' or 'Transform the minion to a 6/6 Pyros...')

If that is the case, then Shudderwock shouldn’t work with Saronite Chain Gang. Shudderwock should summon a copy of Chain Gang and not itself.
Pyros' text should be changed from "this card" to "pyros" and everything would make sense in the world.

They really should make a big patch that fixes text inconsistencies of cards. It's such a pain in the ass.
