What would you think of a Paladin deck centered around the Echoing Ooze card, namely buffing it up completely before the end of the turn it was played to have two crazy buffed minions? Would it be a gimmick deck that only worked once in a blue moon or would it be viable to catch enemies off guard?
I could see this being decent, but Echoing Ooze can't be the primary focus of the deck. Your best-case scenario would be like Echoing Ooze + Defender of Argus + Blessing of Kings, which is a turn 10 play to put out 2 6/7 taunts. Not bad! But very hard to set up.
You could also run things like Argent Protector, or even Youthful Brewmaster to get another Ooze back, but then you'll need other minions that work well with those cards.
One difficulty you might encounter is trying to decide when to save your pumps for Oozes and when to play them on your other minions.
I like this idea a lot. I'm not sure if it'll work better in Paladin or in Druid, though.

I've been thinking this was almost certainly going to be a Paladin card all the time, but you're right. I think Echoing Ooze will probably make an amazing addition to Watcher Druid.
Actually, does the Dark Iron Dwarf buff on an Ooze stay on the copy? And what about an Ooze to the right of Dire Wolf Alpha, does the copy get one more attack?
A buff deck needs one of the following imo: Stealth, so you can buff without worries, charge, so you can buff and win out of nowhere or divine shield, so your buffed minions are harder to remove.
How does it work with something like Stormwind Champion or Raid Leader? because if I remember correctly, if you use Crazed alchemist on a minion with those aura buffs on them, they became part of the base stats that get swapped, and then a second (but only one aura) is still applied onto it? Would it be the same Ooze?

The problem in most decks are the buffs that you can apply. There aren't that many buffs and they are not that good. In addition the nature of the Ooze forces you to play your buffs before you can get value out of them so the Ooze can copy them. That gives your opponent a turn to counter them.
Is a T6 Ooze + Kings combo good? Yeah maybe, it gives you two 5/6. If you get countered on the next turn it is only one 5/6 for 6 mana. Still okayish but can be dealt with. In that way the Ooze will never pose a big threat and can work as a midrange removal bait.
I encountered Ooze + Kings once and going second I played Sylvanas.
