It's very difficult to without a doubt say what the strongest deck will be in a week from now. It's all still very fresh, and decks are still being refined. However, Secret Hunter was a strong deck pre-SoU, and with the Highlander version, it's still very strong. Quest Druid is also still very strong. I don't think Aggro Warrior is that strong, but I haven't played against it much. Quest Paladin is a good deck if you wish to challenge yourself a bit; it's strong in the hands of someone who understands how it works.
Out of these options, Secret Hunter is my favorite one. But make it the Highlander-variant; it's a ton of fun.

Quest Druid is the best of the lot, but feels miserable against Warrior and Cyclone Mage. Secret Hunter is better against Mage but worse against Warrior.
Right now, it's too early to say which decks will prevail, and it looks like Control Warrior will continue to dictate the metagame. And whatever meta establishes now will change when the balance patch arrives, and I'm 99% sure there will be one, because every single one of the last 6 or so expansions had one.
If you want to be on the safe side and not craft anything that falls into obscurity, wait at least a week or two. And if you want a deck that lasts you at least until the next expansion arrives, wait for the inevitable balance patch.
Just to answer your question: I think both Hunter and Quest Druid have great potential right now and in the future, and my personal favorite is Quest Druid. But I wouldn't put any dust into them just yet.

I would also really like to craft Quest Druid just because of how fun it seems but holding my dust because of this.
Don't know how much longer I can wait tbh

I agree with the above comment, secret highlander hunter is a ton of fun a pretty good against a lot of decks.

Secret hunter seems like the better choice here, it can compete against most of the current decks, while being fun and challenging to play.
Quest Paladin and Quest Druid have been the ones I've had the most fun with since launch.
Wait a month or so until cards get nerfed.
