In my eyes, the biggest draw towards shaman is not even the quest per se, it's how incredibly powerful Devolve, Plague of Murlocs and Hex are in the current meta.
Yes, if I know my opponent is aggro, I would mulligan quest away. I only do it against rogue as a class because all the others can be non-aggro as well, but, to be honest, I am not 100% sure (for example, if 80% of your shaman opponents are fast even shaman or murlocs, it might be worth it to mulligan it there as well).
It only runs 4 secrets. I tried a heavier amount of secrets earlier in the season, playing Subject 9, but this list worked better. I have seen other players going with a heavier deathrattle package, it might be worth exploring that, but this worked well enough to get to legend.

Metamorphosis is pretty hard to replace, as it is one of your better reach options. I would probably sub in a warglaives of azzinoth instead.
I did not keep stats, but got to legend in like 5 hours of gameplay yesterday. I definitely got lucky and it was a small sample size.

Maybe I got lucky, because I climbed with it easily, didn't lose to a single Reno deck. I keep Albatross against Warlock and Priest, maybe that helps?

I would probably go with Rummaging Kobold, it allows to generate quite a few extra Jade Golems.

Exactly. You can freely play Mecha'Thun against warrior whenever, and simply combo off with Undatakah.
