After watching Regis, Trump and Zeddy play, I think Murlock will be insanely strong. Mech paladin looks like a candidate as well, as well as tempo pirate rogue.
Personally I hope pirate rogue is good, because I want to mess with my opponent's deck or hand with Hooktusk. Mech mage sounds like fun as well. Control warrior with the new colossal for some shennanigans with double Mr. Smite (one from your hand and one from the discover pool) and two more pirates as a finisher should be fun as well.
Why do you care? One person leaving means your chances of winning the lobby have increased. The removal of the 15-damage cap is neutral (it just means players get eliminated more quickly, which could work to your advantage), and isn't a reason to resent people for leaving.
Yes, the "flow" of the game changes, but the whole point of Battlegrounds is that you should adapt to the lobby you're given, instead of following a standard playbook each time.

Exactly, you should play by the hand you're given. not give up just because you don't get the hero you want. Most online games punish you for leaving early by soft-locking you out of queuing again for some time, because it ruins the fun for others. It should be the same here.
One thing I heavily dislike about battlegrounds are all the people who leave the moment the game starts because they don't get the hero they want and are only assignd "boring" heroes. It ruins the flow so much.
Yes, it's boring as much to only get a choice between Nozdormu, Malygos and Rat King, but people should still stick to it.
They should make it so that you get an increased period of time where you can't queue up for Battlegrounds if you leave early. Like 5 minutes the first time, then 10, then 30, an hour etc.
It's obvious that the Horde will win because of how much stronger the legendary is. I hope the alliance one is good as well, but because people enjoy playing fast decks more than slow, it's (sadly) not even gonna be a competition who wins.
Or did I misunderstand and it's not just the total number that matters?
Whenever I face him he ALWAYS has agorillion minions, like 5-6 of them, while at tier 2, even during the very first turn against him like 3-4 turns in. meanwhile I have just upgraded to tier 2 and have like 2 or 3 minions.
I know of the bonus minion he gets, the one that gives loot, but does he also get bonus minions other than that? Or does he get more gold than others to buy more minions? he feels impossible to beat the first time you face him.
As in when minions attack your hero they take damage?
I guess it's not completely true, there are some secrets like flameward and explosive trap, but I mean a constant (at least for one whole turn) threat?
It could be as simple as a card allowing weapon classes to unsehathe their weapon during the opponent's turn.
I got Kurt Ashfallen and want to use him in Felwood in the demon area. The problem is he's level 1.
How do I level mercs the fastest? Is it to bring then along other, high-level mercs, on missions so he gets the passive exp, or do I need to do lower level missions with him for better exp?
You've just answered your question yourself. Bring Level 1 heroes along the Run against the highest level opponents you can deal with with your strongest Heroes. Obviously don't use them, just farm the passive XP.
That way every hero can be leveled up to Lvl 30 quickly, but unfortunately that's far from enough. But you will see later... xD

There are so many different mercs, there are bound to be builds, like demon builds, orc builds, human builds etc. but how important are they, compared to just using what you find fun/strong individually?

Ever since the rework they've fucking sucked. or maybe it's not that they such so much as other tribes being too strong.
Quilsboars are my favourite tribe, but they are borderline unplayable compared to demons, beasts and mechs, and even dragons.

In the past, even after the nerf, they were really strong. Now I seldom get top-4 with them, even with the overpowered heroes.
It feels like you get access to Charlga and Aggamagan way too late, and if you don't manage to get at least one mega-windfury minion you are doomed.

I've noticed that people play watchposts and the spell cost increase 2-cost card now.
The acolyte is clear, it's meant to counter quest mage, but what about the watch posts? What do they counter specifically in the high-win decks?
