I just watch Twitch: Reckful (he plays more than HS though), Silvername (Russian but for some reason I like him) Tylerootd (high legend grinder) and Kolento (boring but fun at the same time).
And p4wnyhof if you are into robotics engineering.
Kibler is good to watch if you want to learn more about playing the game. He also comes from a CCG playing background, so he has some very valuable insight when it comes to game balance and the realities of Hearthstone as a CCG.
I also recommend Toast if you need a change of pace, although he mostly plays meme decks. He does have a really deep mechanical knowledge of the game, so I recommend watching some of his videos if you're curious why a certain interaction works the way it does.
Both are also highly positive players, so I also recommend them because of that.

I was watching him last night before he got off to go play D&D. He is awesome in arena. He knows his stuff and he also talks to his audience. I love his interaction.
Look up RegisKillbin on YouTube and Twitch. He's not a pro player, but his streams are informative and he does particularly good job from a teaching standpoint.
I watch Gaara ,because for some weird reason he made me a mod. I like to watch Firebat and Thijs,also Tyler and Sjow cause they have nice music sometimes.
