I started my HS journey with Paladin two years ago. Since then, I've bought/dusted my way to Rogue which I currently have a complete set. in between I dabbled with the other classes but became bored with them rather quickly. I'm not of those collectors who feels the need to have every card from every class. usually when I get bored, I dust up and start on something new. I don't care about the loss because I usually end up buying a bunch of packs anyway.
Having come full circle, I'm starting to realize I enjoyed playing Paladin the most because of the versatility. With Rogue, it seems like you have to either play Quest (which I hate) or Miracle which more time is spent setting up plays than simply playing. It becomes a pain in the ass chore sometimes and I don't feel as motivated to play it.
So I guess my question in the topic is a rhetorical one. I've played all the classes now and I'm debating if I should dust everything not Paladin and go all in with just Paladin. I would just play Paladin until I'm dead. Warrior is boring, Druid is meh, Hunter is shit, I hate all things Mage, Priest can go screw itself, Warlock sucks and I've played Rogue to death.
I'm putting my faith back in the fucking light. All his legendaries are useful, the hero power rules, the color of his cards are cool and even his emotes are at least humorous instead of that cunty "amazing" from Mage.
Yeah, Paladin is what most of that other shit isn't: Fun. Thanks for listening.
I feel like Paladin covers all the options. Heal - check. Buff - check and so on. I think I went into other classes with the mindset of ranking up rather than simply having fun. Paladin at the time was fun for me, even if I wasn't winning much. MSoG was terrible to Paladin as far as ranking goes. Then I got to the point where I was playing decks just to win and the fun was gone.
Rogue is just a lot of work with the risk of doing it for nothing. You work to set up a buffed Cleef only to see it get removed. Or you work to buff your Adventurer just to see it get whacked. At least if Tirion gets the Hex you didn't waste any time to put him on the board.

In my quick opinion I really don't think you should be dusting your cards, especially since you said you will just buy more packs. If you buy a decent amount of packs and keep your cards you will be able to play whatever class you want.
That's the way this game is for me, I need at least 6 or more good decks to cycle through majority control. I have spent about 250 on the game and can make any tier deck for any class (except warlock). Just my advice is to not dust all your stuff all the time to keep making different stuff, especially since you do spend money on the game.

What about shaman?
I got a Golden Shaman too. I did have fun with him but it was more with the whole deathrattle resummon Windrunner thing.
God no. I have my fun with Nzoth paladin, but I hate the class.
