Hello!
I used this deck to defeat heroic Sapphiron, there is really not too much to it. On heroic, you have no Frozen Champion for your dudes to hide behind, which results in the boss wiping your board at the start of his every turn, so the only minions included in the deck are the parts of the Unleash combo, Mad Scientist to bring out more traps, Nerubian Egg is 4 damage for 2 mana against the boss, which is alright.
Use your hero power often, but do not let the boss overwhelm you on board. Mind the Skeletal Smith if you have or you are about to play your Eaglehorn Bow. When the enemy minions are becoming too much of a threat, you can abuse the Necroknight drawback to regain control - and to kill annoying minions such as the Spectral Knight. Hunter's Mark goes a long way in this regard.
Save your UtH combo cards - Starving Buzzard, Unleash the Hounds, Timber Wolf - for when you can get good value and good damage to the face. You should be aiming to gnaw at the boss for a bit with your hero power and bow, manage the board, then go for the kill in two large bursts over two turns - UtH + Wolf, UtH + Wolf + Leeroy, 2x Kill Command and such.
Misdirection felt like *the* MVP here - don't place it blindly if you have the choice. It can save you a ton of life and cripple their board, or at least get you closer to the kill range.
Another good thing about traps is that Sapphiron always plays his minions before he attacks, from what I've seen, so those Explosives will be juicy.
Mind that the boss also has Pure Cold in it's deck in addition to the less threatening Frostbolt and try not to get caught with your pants down when planning trap placement or trading your hounds.
If you have no Leeroy Jenkins, you can replace it with an Arcane Golem for example, it'll still be a viable deck! You can even run the Golem instead of the Explosive Shot if you are feeling kinky or just don't have this less-used rare.
Good luck, hopefully you find this decklist helpful on your way to the Naxx card back!

P.S. Contents of the Sapphiron Heroic deck, according to Beonitas. Thank you for the contribution!
For anyone wondering what to face in Sapphiron's Deck, here the Decklist (I brought him to Fatigue with a Weapon/Spell-Warrior, so the entire deck was seen):
3 x Mana Wyrm
3 x Faerie Dragon
2 x Frostbolt
3 x Loot Hoarder
2 x Dancing Swords
2 x Skeletal Smith
3 x Necroknight
2 x Azure Drake
2 x Pure Cold
3 x Spectral Knight
2 x Blizzard
Please upvote so that everybody knows!
PS: Maybe it could also be included in the Guide itself?!
P.P.S. A video of the deck in action by Kizaru1, thanks!

Thank you all for the wonderful support, I didn't dare to imagine this would become so popular. It's great to see I've hopefully helped all you nice people, very motivating.
Great deck. It's not easy, but it's fun while playing, so I just sticked with it till I got it.
Why he always top deck his 8 dmg spell in my face when I have lethal the turn after T.T
I just read this comment, and then headed to the game. Sapphiron had no minions on the battlefield, he had 3 health and I have 6. Guess what? He drew Pure Cold....
Had much more success with: http://www.hearthpwn.com/decks/92571-heroic-sapphiron-hunter
I'm sure I had terrible luck, but simply couldn't keep up with Sapphiron's board dominance through 10 attempts. While I had him down to 1 hp 3 times, I always felt like I was lacking the one card to turn it around. It was just too dependent on RNG for both me and Sapphiron (I felt like I would need the perfect draw and he'd need the opposite). In the end, I smashed him with that other hunter option on my second attempt (1st attempt was very close).
Nice job, I'll add it to the guide, thanks :)
This deck is fantastic! Almost lost but got it on my first try due to an Unleash the Hounds topdeck =)
Third try on heroic. It takes a good mix of luck and a whole lot of patience in holding back your removal. Had 12 life still left. Had buzzard, UTH, and wolf and only UTH'd for two wolves, kill command and arcane shot helped drop the beast to low enough for a shot on my next turn.
How are you all beating this on your first try? This must be insane luck you are all getting. 27 tries in, and still no luck. Guess I am just the unluckiest person here.
EDIT: Finally got him! Try 28. This fight is simply an RNG nightmare. Just need a ton of luck and gotta keep banging your head into the wall but this deck does work.
I created an account just to say thank you for this wonderful deck. Thank You for the hours of time saved.
Beat him on the second try with this wonderful deck, Misdirect was absolute MVP. Play it smart and you'll come out ahead with the UtH + Wolf combo. Cheers for the deck!
It took multiple attempts, to get a good draw, and Sapphiron a less good draw. In my winning match, I played Unleash the Hounds in 2 consecutive rounds, combined with Starving Buzzard and Timber Wolf. I also had an Eaglehorn Bow with 2 charges left, and was frozen before the last round with Frostbolt. Sapphiron got me down to 1 health (yes, really!) with his minions and a Pure Cold. The 2 Kill Command I played in those last rounds saved me. I still had an Arcane Shot left to finish it, but didn't need it anymore.
Thank you Sisyfos, for sharing this deck with us.
Took a couple attempts, but worked like a charm! Thanks for the guide!
first shot. Awesome deck!!! Thank you very much!
1st try, THANK YOU
I won with just one health on my first try! Thanks!
Thank you for the deck and guide. This was my second least favorite HC encounter. I'm stoked to be done with it. :-)
took a couple tries and to figure out the deck but worked great
Worked like a charm on the first try. Thanks a bunch !
Every single turn you got INCREDIBLY lucky. I have played this guy 16 times and never seen him draw so poorly and me draw as well as you did. You could play him another 40 times and never get that set of perfect circumstances again.
true, unbelieveble
