Mulligan Guide: Gluth nearly always has a Jaws in his starting hand (there are 4 in his deck), so it's a good idea to mulligan for an Acidic Swamp Ooze. You might also want to consider a Blessing of Wisdom to drop on his starting Zombie Chow so you can draw through your deck as quickly as possible.
It is not uncommon for Gluth to use Enrage early and slam into your face for 9 damage. So the sooner you can get Taunts up, the better. The trouble you run into is if you kill any of his minions his weapon gets bigger and bigger. You must have a way to protect yourself by either destroying his weapon or putting a Taunt in his way or you are going to die very quickly.
He has 3 Unstable Ghouls in his deck, so you have to be careful when they're up or risk wiping out your entire board. Most of your minions have Divine Shield, which will protect them. However, the minion you run into the Ghoul is likely going to die from his Deathrattle unless you can buff it with Blessing of Kings.
Hold on to your Spellbreaker for as long as you can. It's a great way to avoid destruction from those Unstable Ghoul or get around a Sludge Belcher at the very end. Always try and have a Taunt up so he doesn't surprise you with his weapon or cards that buff his Attack.
I realize that you may not have Harrison Jones and I would suggest adding another Taunt, like Pompous Thespian. You could add Bloodsail Corsair or the newer Toxic Sewer Ooze, but his weapon has so much durability that they would probably only save you in certain circumstances. Tirion Fordring is excellent in this deck, but if you have to replace him I would look for another Taunt. If you want to try something different, please check out the decks listed below.

First try without Harrison Jones and Tirion Fordring! Divine shield minions are very useful for this boss. Very good deck!
Thank you! Won first try.
I had to make one substitution. I was missing Harrison Jones so I used Gluttonous Ooze instead.
