If you took a Handlock and convinced him to stop punching himself like a card-pinata, my Holy Hand priest deck is about what you would get.
Pros: You're a Handlock who isn't emo.
Cons: You're also Anduin, so you are hated by everyone regardless.
The basic idea is to maintain a constant card advantage. More cards means more options, and more options means a higher probability of your plays not sucking. Then you of course have the benefits from Mountain Giant and Twilight Drake.
Things to keep in a starting hand: Basically anything will work. You'll be holding on to most of it for a few turns anyway. Of course, Mind Vision and Northshire Cleric are my favorites to have in a starting hand.

Edit: 0-4 first 4 games and i know i can play priest, and just swapping out vol'jin isnt that much of a loss. so i'll spend some time in the lab with this but from what i played against the 2 hunter, 1 mage and the warrior, the no taunts and praying you get mass dispels that take your turn up half the time anyway just doesn't cut it.
you said you want this to be priest hand lock so drop the extra priest cards and add more neutrals, if you notice the great handlock decks only really have 4 maybe 5 cards that are actually from the warlock class try going that way here
