We have Legendary weapons and very few decks are running any kind of weapon destruction.
We have two of the most powerful "must be silenced" or lose creatures in the history of the game (Obsidian Statue and Void Lord) and yet, in the first Hearthstone Championship of the season, almost none of the decks contain silence.
Because you can ban a deck and target a specific deck that is weak to your line up. Since the format isn't last hero standing you can take that 1 or 2 losses and win 3 times in your favourable match ups.
Because if professional players haven't teched in silence they can just ban Warlock and not have to worry about it and from all the weapons printed the only one seeing competitive play are Skull of the Man'ari and to a very limited extent Aluneth and King's Blade. Once again concerning warlock you can just ban them and usually weapon tech against mage and rogue is wholly irrelevant most of the time.

As for Legendary weapons, at least for me, I cant fit the removal into my decks without taking cards necessary to them out. The biggest problems are the warlock rouge and mage ones. The warlock one is lessened by the fact most are playing decks designed to limit demons to draw out specific ones. That only leaves a few minions to deal with, and though they are powerful, I would rather have a card that removes minions in multiple decks I face than a card that only deals with weapons that are not in a lot of decks. The mage weapon is a two edged sword. It takes a good player, a specific deck, and luck in card draw to make it work without milling yourself. So far its about even the games I lose because of it and those lost for the other player. The rouge weapon can be a problem. But again the deck has to be setup for it, and the player has to be good and get the right draw. Its possible to win against that deck with agro and control, especially if they dont get life steal or draw kingsbane late. So far its not widely played, at least in the games I have played. Add that all up and again I just deal with the minions.
Rogue weapon technically can't be "removed", only sent back to the deck. Early in the game, they will still have way's to force draw it, late in the game, the chances of drawing it naturally are good.
Mage weapon is iffy. If played incorrect, it will lose them the game. If played correct, removing it may not even matter. It's #1 purpose is as a finisher, usually via Fireballs and Pyro. If they play the weapon too early, or if you have heals, chances are it's going to remove them, because so many mages don't run Medivh. (which personally, I do .... I don't care how much of a "tempo loss" he is, it beats milling yourself).

Why do you think that is?

Dust does not burn a hole in the jar. Be careful what you craft, especially before and right after a rotation.
