I was so happy with the results of my deck against Sapphiron that I just felt obligated to post it here.
It is fairly easy to use and understand but I will go through some strategy anyway.

The key idea is to kill his minions with all your spells but more importantly, make sure that he draws more cards than you! So you will basically win by draining him of cards. He only has 2 direct dmg spells Pure Cold so make sure you have 9+ HP so you are able to take the hit. Remember that you have heals worth of 16 and potential armor worth 10 (without counting the hero power).

Do not use Bite unless you can play Savagery (unless you absolutely have to). Also save Bite and Claw for the 3 Spectral Knight since they are hard to aoe away. The Nerubian Egg is also good for these guys.

Try to use Naturalize against his 3 Necroknights and also try to use it when he has minions beside him, but that goes without saying =) It might even be worth taking a hit to make sure he has minions beside him.

One nice combo is Poison Seeds together with Starfall. You might want to have 2 Poison Seeds but I made it, several times, without even having to use this combo. You could also do the same combo using Swipe together with Bloodmage Thalnos orKobold Geomancer.

Also try to use Bloodmage Thalnos and Kobold Geomancer together with either Swipe or Starfall. Also you might just want to use 2* Kobold Geomancer but it works really well with one of each.

One last note, don't be to greedy using Wrath (with 1 dmg and card draw) and Starfire. You want him to draw more cards than you and since he has 3 Loot Hoarder and only 2 Dancing Swords that won't be a problem unless you abuse these 2 spells. Only use them for card draw in case of early lack of cards or emergency minion kill.

Final note, don't be afraid to take dmg. Remember that you want save your aoes as long as possible so they can be as efficient as possible.
