Even Paladin is the Hearthstone Deck I am going to be focusing on today and I have to say it is a good one. Basically it has several different fairly soft win conditions with big minions and constant board control options. You can pump up windfury minions as well in order to just have a better chance of closing out games early as well. It also has several control options that make it a very well rounded deck, however, it excels at nothing. In some cases where you NEED to go fast you might not be able to and if cases you heed to hard control you might not be able to as well. It CAN do everything, it just can't do any one thing particularly well.

Mulligans: Keeping 2 drops along with a 4 drop is generally important. On the list I think it is easier to tell you what things not to keep from the 2 drops and 4 drops. Quick not, I LOVE THE CORPSETAKER Especially if you have nothing in your hand that will weaken it cause it is good into all matchups.
DO NOT KEEP:
Kangor, he makes the corpsetaker stronger
Equality, unless into a matchup you think will be heavily aggro like rogue or hunter cause hybrid hunter is rough early
Wild Pyromancer, unless into aggro again cause he will kill your 1/1s
Concecrate, Unless its aggro again because at this point there are better 4 drops if you AREN'T going into aggro like truesilver and blessing of kings. Its not the worst keep though so if it is in your hand and you think you might need it, then keep it.
Spellbreaker and Chillblade Champion, situational cards that you generally don't need until later in the game to silence a bomb card or use the 3/2 as a worse Zilliax for a board swing (3 health and killing a minion, OR as a surprise game winner.
Control:
Rushing your opponent down if possible is the best strategy which can be done by keeping Truesilver and Blessing of Kings to accelerate the pace of the game and being able to play a 2 drop on 2 and a 2 drop with a hero power on the is crucial to winning the game because the pace is so fast and they can't keep up.
Aggro:
Keeping equality, concecrate, and wild pyromancer are all solid keeps into aggro and you basically just wait for them to run out of fuel and take over the game with your powerful midrange cards and some late game.

Guide:
either 2nd Avenging Wrath or Val'anyr, this deck is good
Avenging Wrath x2 is definitely better than Val'anyr .
Why aren't you playing The Glass Knight, I've seen it in most other Even Paladin's. What is your reasoning for not using it, I find it pretty good.
Any replacement for Crystalsmith Kangor?
Probably something else with lifesteal like another Chillblade Champion
I prefer running a second Avenging Wrath over Val'anyr. I've been running into a lot of priests on the ladder and it's great after Psychic Scream. And overall it makes the deck a bit more aggressive, which I like. I do agree it's an underplayed deck compared to Odd Paladin, which I don't care for in the current meta due to its complete lack of board clear.
You actually bring up a good point but Val'anyr can help carry you into the late game and is pretty aggressive in itself, but avenging can push for game the turn after a scream you are right.
To me, Val'anyr falls into that category of cards that are wonderful ... WHEN they work. But overall I find it to be slow and too susceptible to silence. Avenging Wrath is a little more dependable to me. But that's just me. Everyone like to plain their own way.
