Sure let us just forget how Bonemare, Spikeridged Steed, Aya Blackpaw, Sylvanas Windrunner, Sludge Belcher, Blessing of Kings, Arfus, Faceless Shambler, Twilight Drake and Twilight Summoner all saw play despite the potential curve-stomping from silence.
I will admit that this is a special level of curve stomp, but I don't think it is fair to say a card is unplayable just because Spellbreaker and Priest is a thing.

If this card text would say "Cast each spell you cast on your minions this game on this one. Adapt After each one" it would see some play for sure (however wouldn't be that broken to be honest).
If this card text would contain "Is unsilencable", it would be played, too.
If this card text would contain "Is untargetable for any card effects" it would be a must-include in most of paladin decks.
And if this cart text would simply say "Adapt for each spell you cast on your minions this game" it still would see some play...
But in that form, as great as it is, it's too vulnerable to silence :/

And every single one of them has some impact on the board instantly - Bonemare gives us taunt, but more importantly, gives us Blessing of Kings, that is strong impact on current turn attack of one of your minions. And even after silence. Sludge Belcher Had not seen that much play, because of small instant impact on board, but, as a taunt, it was good, and even silenced it was pretty good. The Lich King gives fair stats even silenced, and also has instant impact for giving at least 1 card. And Aya Blackpaw is played mostly for either jades, and thus she is not that important itself, or her battlecry for gaining tokens. Silencing her is not changing much, if anything, in most match-ups (Exception of course is Jade druid). And all other silence worthy cards - they are played almost only when they have instant impact on the board (See The Last Kaleidosaur for example - it has great value, but no instant impact, what makes him too vulnerable for counterplays. If he would adapt other minion, I'm sure he would get some play, the only question would be which tier quest paladin would be).
Also even if those cards silenced represent some value on board, Spellbreaker is still played in many decks specially for them (and paladin buffs).
Taking there are only 9 collectible cards in the game with "untargetable", naming 3 of them isn't proving anything. But here, Bearshark is played in most hunter decks, both aggressive or midrange/control, for it's stickiness either as early aggressive drop, or as late sticky taunt. Also, maybe not included in decks, but often good discover from Stonehill Defender is Soggoth the Slitherer. Adaptation, that made Vicious Fledgling so consistent, is "untargetable" adaptation. Even if windfurry and stealth are most looked for, "untargetable" made it permanently almost unkillable from mid-snowball.
This minion being untargetable would cause need for whole new strategy of play for both players - forcing paladin to play all his buffs he want before playing this card (because he can't buff it further), and his opponent - to save silence (he has time to draw it, because paladin has to wait to get really good value) for this minion. Going further it would force a bit more control-style decks, slowing a bit aggro and tempo decks. Small impact, but always something.
Of course... And taking most top-decks run either Shadow Word: Death, Polymorph, Spellbreaker or hard-removal, it would be primary target for them. Not even need of changing decklist for it. You know, I'm not saying it's bad. Yes, if it would trigger as you said, it would be pretty nice... However, it would almost only happen against control decks. Having 4 cards played before you play it against tempo deck, while surviving his tempo swings, is almost impossible... and mean he had totally terrible draw. And still, tempo decks often run silence or hard removal.
And last, but not least - Adapting multiple times... Yes. It is op. On this one minion, that has quite good stats for it's mana cost, is playable early game, and grows each turn. But how much would you pay for 1/1 with battlecry "Adapt 3 times"? Because on average that's how many buffs would you play before. And I assure you, 7 mana isn't that amount. Even with deck built especially for this single card, it would be only for-fun-deck, as quest paladin is now.

All you got to do is cast 2 Adapt cards and you'll have a 66% chance at being unsilenceable. That is, if you are allowed to choose the adaptation.
You might want to check your probability calculus and even then something like Spellbreaker will still silence it, but its true getting "Can't be targeted by spells" could make this really strong. Stealth might be even better.
do you see this brawl's interaction with secret deathrattle?, the effect will be the effect you chose the first time, so if you cast adapt can't be silence on a minion, this will gain it
I love the design of it, but such crippling vulnerability to silence and "almost" 0 immediate impact makes it very hard for me to get on board the hype train.
I don't mind Tirion getting silence that much since he's still threatening, but Sunsorrow's really gonna take the D.

This cards interaction with LoH's alone is interesting enough for me to want to craft it. But I have little faith that she'll be competitive after a couple weeks.
Didn't even think of LoH. Silly as it may sound I've played hand-buff paladin running Fight Promoter to rank 5+ in wild this season. Hard to gage this card without playtesting but interesting interaction. Could just be a better pre-nerf Ancient of Lore, which was included in every single druid deck back then.
This is a really really strong card. One spikeridged steed is enough to make this a viable card.
One Spikeridged barely makes it break even, you mean.
This is a very long con to be running if you want a meaningful effect, your best shot at tempo primarily would be one Blessing of Kings and one Spikeridged, which is a relatively potent combo, but in general there's going to be waaaaaay too many counters to this with all the hard non-targeted removal. The most interesting combo stated is using Lay on Hands on a minion, then letting this out to get 6 cards. This combo however also works contrarily to the Paladin Spellstone, which insists on you healing your face. Very odd design choices, but I guess they want to try to make Buff Paladin a full archetype. I don't see it going particularly well with some of the counterplay tools the mainline classes are getting.
Yeah that's exactly what i meant. But breaking even is not a bad thing. We've seen combos such as Spikeridged steed + 1 drop, yes usually those 1 drops werent just plain 1/1's, but they had something else on them Divine Shield, more hp, more attack, lifesteel... Something. However if there is 1 Spikeridged steed, there usually is the 2nd one. And this is a late game card so you will usually get to play both before playing this card.
Meta is unpredictable so we don't really know if silences will be popular in the next expansion, right now it's uncommon to see silence cards. And even if someone runs it, question is will they have a 2nd silence for Tyrone.
Card on it's own is extremly powerful but that doesn't mean that it will be useful. I can definetly see how this card can be waste of space. For example Dirty Rat hard counter this card, if Dirty Rat hits it early on it's just a 1/1 and you've sacrificed big portion of your late game to be running this card.
