With only 7 Dragons Wrathion won't make the cut. You need at least 8 for consistent dragon synergy anyway and in order to make Wrathion worthwhile you should probably play between 9-10.
While GiantPatron Warrior is certainly beatable and even close to a 50% matchup, Worgen Warriors & Anyfin Pallies cannot be beaten unless they mess up along the way or you generate insane pressure in the mid game without them drawing into their clears.
Yogg is decent. I'm actually experiment with him myself.
AArcane Giants on the other hand don't work very well in Priest decks. They are only effective if you can play a lot of spells in the early/mid game and then slam an 8/8 for 5 or less mana before t10. Priests simply won't play that many spells until then and the Giants will clog your hand without being playable.
Even Rogues that play spells faster struggle to make effective use of the Giants. For now, token/Maly druid seem to be the only viable lists with Giants.
If I wanted to replace Shapings, I'd play Justicar and another big boy. Not a huge fan of Shades tbh. They provide great value but tempo-wise they are terrible. A 4/3 for 4 simply doesn't cut it in this aggressive meta.
Not a huge fan of it in Priest. Granted, the deck runs 21 spells and Yogg might be decisive when played at a crucial time but there's a reason he never made a big splash in Priest lists. The reason why Yogg is great in token Druid is because you can cheese out games when playing from behind. For instance, you ramped 2 mana ahead of a Dragon Warrior, played 6-8 spells by (your) t10 but you find yourself at 10hp without a taunt to protect you and the warrior threatening lethal with Rag/Grommash while still having a 9/9 on the board. Priest on the other hand wins by removing the opponent's threats while keeping a big dude (Blademaster for the most part) alive. In slow matchups, fatigue can also be a win condition. Yogg doesn't help either.
The deck doesn't benefit much from Elise either since it thrives off tempo gains in the mid/early late game and fatigue isn't its main win condition.
If anything, I'd rather add Justicar than either of those.
Not really, it depends on what you're playing against. The chances of having either good removal or being able to resurrect a Blademaster early on are rather high. If you don't draw either, you can still simply slam something like a Priest of the Feast or draw additional options via Thoughsteal.
Ofc there are those games where you find yourself sitting on double Circle, Death, and Entomb but those games are pretty rare and bad draws can happen regardless of what list you're playing.
Haven't seen a single one in days but traditionally Jaraxxus is any Priest's doom. You either need really good Thoughsteals or burst Jaraxxus down with Auch & double Flash Heal.

Shaping isn't that important. I'd recommend Justicar as a replacement or a fatty like Rag.
