What you don't see is the games when don't get the lens or draw x2 tips before can play one of the lens.
For now people still trying the new cards, soon as the meta set down and we see a lot of control warriors again (eat murlock for breakfeast) then this deck is done.

This costs 7, only requires 1 attack to get through the 1/1 and any other damage your opponent has will go to your face. Plus, playing this on an empty board as control? That means you've already stabilised and there are probably more impactful plays you could be making with that 7 mana.
Its a good card, just not that good.

Think about it: To kill this thing, you need to attack three times on your turn, two of them having to attack a 7 attack minion. If you ignore it, it snowballs. The mana, # of cards, and/or tempo the opponent has to use up to take this out easily is going to be worth more than 7 mana.
The only reason why it might not see play is that 7 mana turns are in that realm of "you better do something really impactful on the board", and while he's a PITA to kill, only the 1/1 taunt is impacting the board, and that's just not enough.
This will be insane in arena, though.

It's sticky as hell and a major threat. It'd be hard for an enemy to take care of it since it requires a taunt to be killed, and it to be killed with 5 damage then 1 damage a second time. That's hard to pull off if your board is cleared and the person who played it has a hand full of control cards.

It is very powerful, flexible, and can immediately impact the board in several ways (e.g. double value-trading with rush/windfury, becoming a wall with taunt/divine shield, or killing a single threat with rush/divine shield), but it doesn't open up any new archetypes--it is just a card to put into a wide range of decks to support their gameplan.
One potential archetype that can turn this into a serious payoff is Quest Shaman, which can use The Heart of Vir'naal to gain all four options. A 9-mana 6/6 taunt, rush, windfury, divine shield, minion is pretty powerful.
FYI: Shudderwock jank loves this card.
Midrangish deck need some love to and midrange minion never really exciting. They are just, like you said, best minion for that curve
