If I had to choose, I would say brawl, cabal, and doomhammer would be the first things I should go for

The answer here is pretty easy: Decide on one deck to play, then craft the cards for it. Looking at your list, that's a decision between Control Warrior, Control Priest, Aggro Shaman and C'Thun Druid.
Every play in every Hearthstone game is a calculated risk. If I play Ysera now then maybe my opponent kills her or Entombs her, and I lose. If I don't, I don't set up a finisher to bring him down before kills me, and I'm guaranteed to lose. So I play Ysera to bet on RNG that he did not draw a hard removal yet.
Those 10/90, 20/80, 30/70 ... 90/10 decisions are everywhere in Hearthstone. They are just more visible in tempo mage, and small things like an Arcane Missile that hit face instead of killing the remaining 1-health minion can snowball into deciding the game.
And the Ship's Cannons fire wild! This is a high-risk high-return tempo card for Pirate Rogue, similar to the old Zombie Chow. Hero health is a much more scarce resource for Rogues than other classes, but the ability to slam down two 3/3s on turn 3 can allow you to get ahead and carry the game to victory before your hero explodes.

The point of Freeze Mage isn't about freezing the opponent's board, it's killing the hero. Frost Nova / Blizzard + Doomsayer just happens to stall the game so you can get all the kill cards in hand.

This last one brings back my question I had in post 2. What do the rules mean exactly about how your card copying itself has to be a 'standard' possibility? This one only seems to be able to copy itself if you have another copy of Undercity Gambler in your hand. This is similar to Burgle, which can only copy itself if you are playing against a Rogue. Would both be allowed?
What I meant by "standard" was that we don't want cards producing copies of themselves only in cases of wacky interactions. For example, Malorne doesn't normally produce any additional copies of itself, but Baron Rivendare causes it to when it normally wouldn't. Cards like Burgle and Mind Visionare allowed for this competition, though. Just through part of their usual functions, there's a normal chance, though dependent on your opponent's class and/or deck composition, that they'll produce copies of themselves. We actually addressed them in our first draft of this competition's rules but ended up deciding to deliberately leave them out because they are somewhat circuitous and unclear examples, and we didn't want to cause confusion.
But here's the issue: Dreadsteed could read "Deathrattle: Resummon this minion" and Anub'Arak could read "Deathrattle: Add an Anub'Arak to your hand" and they would work exactly the same, _except_ for this competition.

Dreadsteed, for example, comes at a huge mana cost penalty (4 mana for a 0-cost minion) AND needs help like Baron Rivendare or Faceless Manipulator to multiply itself.
Tempo Mage is temporarily bad while Zoolocks infest the ladder. Once those are rotated out because everyone and their mother is running counters, tempo will be back. The deck lost no core cards (for the no-secret version) and even gained new toys, I don't see it go away anytime soon (while Flamewaker is still in standard).
And anyway, I'm running a classic tempo deck featuring Nexus-Champion Saraad in wild and I'm doing very well. My only loss was a mirror match where after 3 Spellslingers he got Mindgames into Antonidas (fuck!) while I was stuck with Astral Communion (fuck!!) and several turns without minions to play (fuck!!!) then drawing Antonidas but no spell under 4 mana (fuck!!!!).
so im a free to play and 1600 dust and a golden Flame Leviathan which i want to DE,mostly want more playable legendary and i dont care for golden cards. So in theory i can craft 2 legendary at the moment. I really enjoy dragon based decks so i want to craft Ysera ,Deathwing, Dragonlord, Chillmaw, maybe Deathwing dont know about that last one. Im also missing Alexstrasza.
I really enjoy control decks and i dont mind playing either wild or standard decks. I would love some help choosing from this list.
For most dragon decks you need Ysera + full BRM. The others are optional based on that particular deck's class and strategy. You're probably better off crafting Twilight Guardians plus whatever else you're missing for a particular deck instead of a second legendary.
Obviously nobody can tell you whether you should play dragon X or Control Pally, but you can decide that yourself.
The Archmage + Echo combo is really hard to pull off, I wouldn't go for that. Of course, you can still build really good mage decks with those two cards, just don't expect to get the infinite fireball dream more often than maybe one in 10 games.
Tbh, Cabalist's Tome is my 2nd favorite mage class card. I'm not talking about just the WOG set, I'm speaking in general, its only beaten by flamestrike. I'm running 2 copies of cabalist's tome in my freeze/yogg deck and lol, I laugh at the naysayers that said cabalist's tome would be way too slow. Cabalist's tome typically does hand me a spell that isn't useful, but for the most part it gives me at least 1/3 useful spells and I almost always have a turn to play a cabalist's tome since I can just freeze aggro.
Dude, it's slow for TEMPO mage. Nobody said anything about freeze.
No way, Tempo is all about creating value. This gives you so much fodder for your flamewakers and archmage.
