If your deck sucks (like the Warrior one when I faced him), one option is to play only as much as you need to control the board and hope you can fill his hand with spells before he can complete his quest. It worked for me, I was able to control the board and play as few minions as possible. He eventually filled up his hand with spells and was not able to do anything more than pass each turn. This is a super specific strategy but there was honestly no other way I was going to beat that deck, so worth keeping in mind.
I had a terrible control Warrior deck with too many weapons and not nearly enough minions to fight for the board. I quickly realized the best play was to not play anything and hope he can't fulfill his quest before his hand fills up with spells he can't use. This is kind of super specific strategy because you need several control cards to clear the board until he can fill up his hand. But I went for it because my deck was terrible and I don't think it could have beaten any of the bosses. But the strategy worked, he eventually started milling his important minions and never got the quest completed and eventually fatigued to death. Satisfying win.

Funny enough, I did not see a single weapon hate card from a portal. Meanwhile, during the next Brawl, playing as Uther with the lifesteal weapon, I saw 4 weapon hate cards in the first hour...
Lol, I must have played 30 or so games, I kept waiting for them to get some weapon hate from a portal but it never happened. I can only remember ever seeing the one and I was the one that pulled it. You got pretty unlucky.
