100% agree with your assessment of Rexxar. Thing is, his current best environment is in wild given that a good deal of hunter's control options have rotated out. He absolutely shines in iterations of the old Reno control hunter build. That said, he can be really successful in a standard midrange build, but it requires a great deal of awareness to know when to play him. Losing steady shot can be a huge problem.
I think the best decks so far are (in no particular order): demon lock, jade druid (ugh), control paladin, midrange hunter, and control priest. Pirate warrior will always be effective to some degree with the current standard pool, but the control decks have better tools to survive the initial burst.
Big priest ez priest. This deck has been stellar against the aggro matchups, and holds its own against demon lock. I'm curious to see how it fares against jade druid, but so far it has been a blast to play.
The rogue DK has some great potential to support a new archetype. I think she could see some play in a N'zoth list with the hero power as it would allow you to copy your N'zoth without waiting an extra turn. Not to mention the pseudo ice block effect is quite strong.

If you have spare dust, craft the hunter DK. It is incredibly fun and surprisingly effective.

How anyone manages to beat jade druid with this deck is beyond me. That said, It's a really cool idea and it feels great when the deck actually works.

It plays well with shadow word horror among other cards in the deck. Though it does end up as a dead card as you said, more often than is desirable.

At least it can be merged with Stonetusk Boar using Build-a-beast.

Not as much synergy with shadowform as I expected, but what an awesome effect.
