In control match-ups and against Hunters, yeah you probably won't be able to find Teacher value. But against everything else, teacher can simply win the game if played on curve on an empty board. Some match ups you don't need the "Miracle Turn", some match ups you just need board, and Teacher is the best card for that.
You are correct. This deck suffers against Super Fast & Super Slow decks. Against Reno you just have to board control and keep playing threats until you can burst them down for 10-20 Damage usually.
You already know this, but the more matches you play the more you'll get used to each match up. The Shaman one is difficult yes, but eventually it'll come full circle as long as you're mindful and don't get on tilt.
I have also thought about this as well and have tried 1 shiv and 1 fan, but I immediately noticed I was losing out on board control more often than not. In a Control Meta, definitely 1 fan is enough, but it's just too good against everything else.

The coin can be used in many effective ways:
1. Draw cards with Gadgetzan Auctioneer.
2. Make more 1|1 Minions with Violet Teacher.
3. Tempo a turn ahead of your opponent.
4. Combo
5. VanCleef
Plus more ways that are really only found through experience with the deck.
