After playing Paladin for all of S10, here are the worst matchups:
Rogue. Just so hard to get ahead on board, and they have perfect answers to a lot of your stuff. Fan of Knives will just bend you over and give you the time if you play Muster for Battle without a Quartermaster. Their significant amount of burst can also be challenging, because you don't know exactly how much burst they have, so you don't know how high you should keep your life total.
Aggro Huntard can be pretty challenging if you don't get any early counter-play to fight for the board. You also need to draw into a big heal (Lay on Hands/Antique Healbot at some point in order to avoid just dying to Steady Shot.
Priest isn't as good as it used to be. If the game goes really long, then you will probably win, but otherwise it's a tough matchup. Remember to never ever play Tirion Fordring when they have 10 mana.
Mage in general is hard as well. Their hero power counters yours, and Mech Mage can get ahead early very easily. You'll need a decent Consecrate (possibly combo'd with an Equality) in order to win.
I've played priest to legend this season. And yes, I've had a decent win-rate against paladins. Also, you're absolutely right about Tirion. If you can't play Tirion before turn 9 or 10, don't ever play him unless you have Black Knight and Harrison in hand.

I actually wish the meta becomes 90% aggro. So, I can build a super anti-aggro deck that and win every game. IMO, current meta is very diverse. It's not all hunters or all zoos nowadays. During my climb from rank 16 to 5 this early season, I've met plenty of Druids, Warriors, Handlocks, and Paladins. In fact, I've met more control/mid-range decks than aggros in general.
It's actually more frustrating to play in the current diverse-meta than the aggro or control dominating ones since you can't build a deck to counter the "majority" of the decks.
It says, "Whenever a friendly minion dies while this is in your hand", so basically the stat will change while it's in your hand, not when played. So it CAN'T be silenced. Think of how Mountain Giant and Molten Giant work, their cost dynamically changes while in your hand. I'm sure this card also works the same way, dynamically increasing its attack power while in your hand.
If you play Undertaker, then Harvest Golem. If spell-heavy, Unbound. Harvest Golem will always get stolen by Cabal, but Unbound can be buffed up to play around Cabal.

Priest mirrors are the most trickiest and most of the times it comes down to the RNG. However, you still need to mulligan correctly and play it right to win. The cards you want to start with are Northshire Cleric, Injured Blademaster, Circle of Healing, and Power Word: Shield. If you can put down Injured Blademaster on turn 2 (with coin) or 3, you will likely dominate the early game and it may even win you the game.
The quality of Thoughtsteal really matters in this matchup. Pray that you draw your Thoughtsteals early because if your Thoughtsteals are in the bottom of your deck, there's a significant chance that your opponent will Thoughtsteal your Thoughtsteal and gain massive card advantage. It happened to me and my opponents more times than I can count.

Does warrior need more weapons though? If we get a weapon every time there's an expansion, warrior will end up having a weapon for every mana cost.
I'd really wanna see a priest weapon that has synergies with spell dmg or healing.

When you have established the board, do not over-extend. Always play around the Auchenai Soulpriest + Circle of Healing combo after turn 4 and Wild Pyromancer + Holy Nova after turn 7. And do not put down Sylvanas Windrunner on the empty board.
