It's second day of the season, with well established meta, ppl are running tier 1 decks a lot (it's common in HS in general and i'm doing it too when climbing, that has 0 legendaries btw), but my experience with the system has been good. I ranked up fast with the bonus stars and have felt more rewarded than before so my suggestion is: either wait untill the new expansion comes, but it will be a DH fest in the beginning at least, or tank your MMR untill you face worse people.
about the misplays, I played in gold 1 against a mech paladin that made 2-4 huge plunders in the game so it's just a matter of luck who you run into.

Corrupt the Waters is not needed, and you can make it work without Shudderwock, but if you have it, your win chances increase much. And if you have it, it is a massive swing turn. Getting a random Zephrys the Great spell, 2 dragons for 0 mana with Dragonqueen Alexstrasza, and if you have other minions on board, you could get random Siamat choices into Faceless Corruptor.
Some cards are just good cards in Highlander decks, but don't get fooled, because there are many other replacements which might be cheaper. Even if you see a decklist with many legendaries and going for a control style of play, you can switch some cards and make it a bit more midrange or somewhat aggro or vise versa.

Have you thought about a highlander shaman? It is really fun to play and is competitive against all decks. It got me to rank 4 this season.
The problem with highlander decks is that it is the most expansive decks most of the time. So if you are on budget and have zephyrs then a highlander deck can still be too expansive.
otherwise I recommend playing non highlander decks but with fast draws like a warlock or rogue.

You must be a master mind. Making cards work for you that not many people play equals low rank. Shall we call Hunterace a noob for making Glinda good again? I’m always between rank 5 and legend, but okay. If you say otherwise, no problem :)

Bogslosher or Brewmaster, are very useful in highlander decks. if you don't agree, okay, but I can make it work very easily and it's imo really powerful.

I'm opening Knights of the Frozen Throne packs, because I'm making a start in wild. I've opened Uther of the Ebon Blade and Lilian Voss. Not the best, but I'm trying to use Uther of the Ebon Blade in a Pure Paladin deck.

Highlander Hunter has so many variations, you don't actually need Veranus or Dragonbane.
Some great variations are:
Secret/Spell package with Zul'jin.
Dragon + Face with Stormhammer and just a bunch of dragons and direct damage.
A fun highlander package with Unseal the Vault and Shu'ma.
