It can work because there are a few nice combos with it (Unleash, Rat Pack/Infested Wolf), but since its nerf I am not impressed with Juggler. Crackling Razormaw is a better 2 drop in my opinion, and if you have Knief Juggler you still want Grandma since that is one juggle with it. Maybe instead of a 3 drop you can run 1 or 2.
Shaman is definitely one of the less easy matchups for me too, but it boils down to mostly luck: Evolve is an rng card, they can get op creatures stopping you from clearing the board and hitting his face which is really bad. But sometimes it doesn't work, and the minions themselves they use are not that great. It is usually a toss up for me, but beating them is not impossible.
Arfus is a fun card and looks like a fitting one since he is a Beast. My only problem with him (and the reason why I won't use it - although I have him) is that he is a 4 mana 2/2 which won't give you anything until he dies. The biggest problem is that Priest can steal it with Potion of Madness and you also lose tempo on turn 4 due to it. I would rather put in a big threat instead of The Lich King than Arfus - but hey, I might be wrong. Try it out. :)
I tried Hyena and was not really impressed, he is a sure way of eating a removal for sure, but this deck has enough threats late game to not worry about Hyena which doesn't mean you can't sub it in since the deck is flexible.
Regarding Pirates, I didn't see them on EU ladder since the beginning of the new meta, maybe played 2 matches against Pirate Warrior and I am not really afraid of them. If you want to counter them harder you can sub crabs in anytime.
Your point is valid with Fledgling and Hyena, the deck is less aggressive, but a Midrange-Controlish approach (which DK Rexxar is for) is much better against the current Control Meta. However I admit, I haven't tried Fledgling with this deck. I will do this week and keep the guide updated.
I didn't try Tracking yet. It is a great card and it has its advantages, likes indeed it can pull your Rexxar more easily against control. The thing that I don't like about it is that it's a strictly worse discover mechanic. It can search for anything, even spells and the hero, but you discard two other cards when you pick the one you want and sometimes the choice is too hard for me.
Regardless, I will give it a try having 1 Tracking/1 Stitched Tracker in the deck, and keep you posted how it worked out.

This is the list that is the most consistent for me in Standard at the moment. Of course I am not a pro player, so all the comments and suggestions are appreciated (even the mean ones, troll friends).
It is the only viable weapon in Hunter which is a shame since it's a flipping 3 mana 3/2. It is only there for effective trade support. You can run something else if you wish to counter specific decks, like an Ooze.
Unfortunately I don't have it so I cannot tell whether it is good for the deck, but if you want to try, put it in in place of a 3-drop (Stitched Tracker looks like the ideal candidate - although I prefer the cycling it provides)
Sounds good. Cutting Rat Pack makes the stickiness less good and cuts some of the combo in the deck, but Stonehill Defender is kinda a "card draw" and an op card against Aggro. However if you cut Rat Pack you might also want to reconsider Corpse Widow for Nesting Roc. Bearshark is just generally a solid card, especially against certain classes (Priest, Mage). With Houndmaster it can snowball quickly gaining tempo advantage making Rexxar safer to hit the board.
2nd Deadly Shot is definitely helpful for some of the match-ups, and luckily the deck has flexible slots so teching in another one is definitely viable. Personally I am okay with 1 because usually if I need 2 during a match I am already losing, I prefer to kill minions with Crackling Razormaw poisonous adapt or Rexxar's op beasts lategame.

I think he is kinda the core of the deck, but if you don't have it just add a good Midrange minion like Nesting Roc or another Corpse Widow

You could use Scavenging Hyena as a replacement, but it is not as good as Kindly Grandmother. In case you have to cut deathrattle minions you might be better off with a Nesting Roc instead of the 1 Corpse Widow
