To be fair, they implemented it for counting your opponent's hand size which you could easily count yourself as well so why not do it for your own hand
I think the mounts work similar to bolf ramshield, and so they take all the damage, die and then your hero takes damage, however heals go to the mount first too and only apply to your hero if the mount is fully healed

Most cards are useless when transformed, for example sylvanas (probably one of the best legendaries in the game) is awful when transformed
