I have roughly a 60% winrate with different versions of the deck. The spread between all the different variations is 53-77. However I have not been playing this at Legendary, so some of the numbers are going to be skewed. Also, because I am literally the creator of this very specialized toolbox, my winrate is going to be higher than someone playing the deck blind.
Most importantly, the winrate of the deck isn't going to matter unless and until it is played by enough people that it that trackers can collect meaningful stats instead of the small sample size of one person's games. That is a flaw of every decklist with "X% winrate" in the title. It is an attention grab more than a meaningful measure of a deck, and I don't have the brass knobs to assume I've created a metabreaking masterpiece. All have done here is find a mix that hits the meta from a very different angle, while showcasing what warrior can do even if it isn't the strongest class at present.
The core deck is likely going to be more of a tournament style deck than a ladder deck, and if you need the stats before you pick it up it probably isn't right for you. That is why I am working on a more ladder friendly version in the tempo version.
You can try a Gather Your Party or x2 in place of Woecleaver (and maybe something else), and just save it for when it would be most impactful. Oondasta might end up being cut anyway because it has consistency issues -- Especially since she is a second card after Hakkar that sometimes takes up a whole turn (and yes... you still sometimes have to cast from hand). Garrosh is a blanket control card. While nice, Dr.Boom is more important, so Garrosh won't be as missed.
So of your list, the only card that I think is an absolutely must craft is Akali, the Rhino, largely due to the busted things you can do, pulling copies of Herself or Zilliax
For What its worth, here's a wildly different version I am kicking around that might make it into the final write-up:
Think there might be any benefit to adding Rummaging Kobold to make multiple Woecleaver's more of a sure thing? Not sure what you'd cut to fit it in. Maybe Weapons Project or Blood Razor? Just curious to hear your thoughts...
The problem here is that Kobold can actually hurt Woecleaver by messing up its pulls. Woecleaver is a tool to use at the right moment, not the sole purpose of the deck. I often use Woecleaver AFTER I cast Dead man's for the first time, and almost never on curve, unless I'm getting pressed and feel I need to burn the rush package early.
Surprisingly, I have every card in this deck and I actually crafted a good majority of them instead of opening them. I hadn’t thought to try Akali + Oondasta outside of a pure rush deck. My only concern with this deck is that it has so few threats meaning you have to wait to draw them AND both DMH before you start ramping things up. I may have to do some testing with this deck.
It definitely has a learning curve, especially playing around Dead Man's Hand. Knowing when and how to pitch stuff you don't want to copy, matters a lot in preventing you from stalling later.
The best advice I can give is that there is a duality to the deck. Sometimes you can sit back and craft the rush combo and abuse it with Dead Man's, and sometimes you just have to burn the Rush guys early and lean on Omega Assembly and Dead Man's instead. If you try to do everything every game, you can stall really badly.
Is Hakkar, The Soulflayer absolutely necessary for this to work? I've been holding on to Woecleaver and Scourgelord Garrosh for a while now, and I can't wait to try this.
This is an excellent observation/question. From time to time I ask myself this very thing -- every time I draw him early and know that he is just gonna sit in my hand for-freaking-ever before I get a chance to play him or even Shuffle copies back into my deck. The truth is, he is basically a tech card versus other "control" decks or decks that like to draw heavy.
Most of my games won vs Spell Hunter are because of Hakkar.
Mage wins? Hakaar and lots of armor.
Priest (excluding Combo Priest)... Hakkar.
...
Part of me wants to think that normal fatigue, (or even enough WOMBOs) might win these matchups. But there is a catch... Corrupted Blood starts doing damage before fatigue does, and accelerates much faster once it gets going.
I think you can do this deck without Hakkar, the Soulflayer... but he is so important in certain matchups I wouldn't want to. The awkwardness of sitting on him in hand occasionally, is well worth the games he carries.
I got and Idea like this but my initial plan was not only zileax but also using 1 bakefull banker.
Baleful Banker can be some good tech, but he would be a little redundant to Dead Man's Hand and there is a chance he can screw up your Recruiting from Woecleaver. Also, this deck tends to hit really slow and then really hard. I worry that Banker would only be relevant after you have already "won". Not a bad thought, however... thank you!
Updated to Include Oondasta, which is performing really well so far. Updated info-graphics to reflect changes, make certain interactions more readable, and to add a little fun/humor.
I would hesitate to cut Forge of Souls, as it allows us to clone and fetch Woecleaver late -- and Woecleaver helps us to re-thin our deck to improve draw quality. I have actually cut one Blood Razor and kept Forge at x2 for that reason, and I seem to be OK... but that hurts the aggro matchups a little -- so you have to mind your matchups some.

I just replied to a similar issue. Akali first, the rest are negotiable.

Which ones?

Updated to include an additional video courtesy of Tommy Wave. Lots of good content for learning the deck!

Thanks for the interest Tommy! This is a very tough deck to play blind, and I hope you keep at it!

Geez, why are people dusting Death Knights?! It is really hard to replace everything Garrosh does for us.
Maybe Something like Reckless Flurry if you can avoid sabotaging your armor completely.
Maybe Commanding Shout since it can be a toolbox card for when you start playing minions, or you can just cantrip it away.

For what its worth, most games aren't as long as dueling fatigue decks... but yeah, our games are longer than the average ladder spam.
Thanks for checking it out in any case.
