Just had a situation where my opp played Rattlegore. I knocked him down to 3 health remaining. I played the card that switches attack and health, making him a 3/9. However when I killed him he summoned back as an 8/8. Given the death rattle “resummon this with -1/-1), I think it should’ve been a 2/8. There’s probably an obvious and simple explanation for why it didn’t come back a 2/8 but I can’t think of it. Any ideas?

I believe this was discussed in detail a while back. If I recall correctly, the final answer was basically that Rattlegore's text is misleading.
It should actually read, "DR: Resummon an 8/8 Rattlegore, and then a 7/7, and then a 6/6..."
But in the interest of card text space, they worded it the way they did.
Internally, it always summons the next one, regardless of what its stats were when it died.
Legendary with bad text, Rattlegore is working as intended, read is as deathrattle: resummon this minion with original stats -1/-1
That means stats reduction effects doesn’t matter
Ahh.. ok… thanks for help. That’s one ranked game I won’t get back. But at least I’ll know better next time.
