I've found it incredibly tough to beat Paladins with Handlock lately. They always save their Equality + Consecrate for your giants, and even if they don't, they have two Aldor Peacekeepers and nowadays Paladins seem to be running Humility as well, making the Giants 1/8 Recruit killers.
I struggle too. I found best to make it last longer. You have to bait their removal even if that means not spending your mana. Don't overextend. It's best if you can use your drakes before your giants. Let them overextend and punish them with shadowflame. Sometimes they got all the answers and you can't do shit.
Paladin is my worst matchup lol. My winrate vs paladin is hella low according to my tracker. However I do remember there is a pattern that works well against them: you need to have some extra strong drops with more than 4 hp, and they arent taunt. The reason is because truesilver cant kill it, and TBK is dead vs them. Sylva and Cairne are great fit here.
Haven't won a single game vs the new Kolento late game paladin. Haven't run into that many but 5hp drops are good idea, we'll have to see if this deck catches on. Seems pretty hard to play so I don't think that many people can pilot it anywhere nearly as successful as kolento.
Shockadin is not easy but have had some success since adding more taunters (sunwalkers).

Try finding a spot doe Lord J. Vs the late game paladin he can win you the game sure you might have 1/8 giants hopefully with taunt that are nothing but a meat shield. Just make sure they cannot kill you the turn after you drop Lord J and infernals will win.
Out of watching the live stream when Kolento hit rank #1 Legend with this deck, and after rewatching it when Trump was studying it, I gained some experience regarding this deck as a Handlock player myself.
Yesterday, I got matched up against one of those Paladins and I decided to play around Equality as I don't really consider Humility and Aldor Peacekeeper effect as dangerous (especially that the affected friendly giants can be Ironbeak Owled). I executed this plan through considering not having more than 3 minions on the field with max number of 1 giant.
I teased his Equality with one Twilight Drake, one Earthen Ring Farseer, both already on board, and a Ragnaros the Firelord played on my turn. I had the option to play a Molten Giant, but chose not to in order to minimize the loss. He indeed played the Equality and got rid of the "only onebig threat on board", and assuming he didn't have another one in hand, I dropped the Molten on my turn, Sunfury Protector it, and Faceless Manipulator.
He conceded.

You can't harass members who play Face Hunter, nor are they compelled to make preemptive apologies or justifications for playing it. They don't hack or crack their opponents' game, they simply play existing cards that form a specific deck. If you suck at countering Face Hunter, you should blame the designers, not the community.

If you aren't running any owls I would recommend running 2 of them. They are very good against everything.
On top of that, don't overextend your board.
I normally drag out the game till i could cast jaraxus. Thats where you shine with the token 6/6. Doesnt matter how many equality he have.
Jaraxxus is how you win late game vs a paladin,impossible to lose.
Silence your Giants after Aldor's/Equality sometimes saves a game.
