There's like 18 different decks on ladder rn (many of them using some of the strong new cards), even at legend. I'm not surprised you haven't seen many even shamans lately.
Sometimes decks are just not popular I guess. Lots of sites say its tier 1 atm, I will craft Thunderheads and try it. But yeah I guess it is sort of like Cubelock in last meta, quite strong, but not really popular to play.

Even Shaman seems to have been set aside for a deck that is either newer, something that has been showcased as doing well in a tournament (even if there were decks not showcased that do just as well), or a deck that was showcased as doing well by a streamer.
People tend to forget that there aren't only one tier 1/2 decks out there. *Shrugs*
I encounter it occasionally in Standard, it seems to run out of steam pretty quickly. But if your opponent can't answer your first few turns, you will often run away with the game.
Try playing Wild, at least 50% of games I play from Rank 5 onwards are Even Shaman.
I'm not complaining, the decks I play cope with Even Shaman pretty well. But it would be nice to see some imagination.
I faced one yesterday for the first time I think. I thought it was quite broken how they get to pick their totem every time.
It's supposed to be a decent aggro deck now though... although Trump is singing it's praises and I sometimes think he resides in an alternate dimension... commonly known as "opposite land"

I think you are right when you say that maybe the deck wasn't showcased that much. Now that I think about it I rarely see the "famous" streamers play the deck. If this is the case it really says a lot about the state of the game.
But to all the people that say that people prefer newer decks to try things out I think it's not the case:
1)A lot of people play the same old decks with 2-3 max new cards
2) The deck was never popular, not now, not in witchwood. I can count on the fingers of one hand how many times I've encountered the deck in the last four months.
I'm laddering with it and was doing well, but I seem to be hitting a very bad patch with it. Zoolock used to be an even matchup but it's tilted in their favour now, odd paladins too. It's bad against hyper control like BSM and control / even warlock, it's not great against warrior, and I'm finding druid a tougher and tougher matchup. I see few hunters now, which is usually a decent (though hardly one sided) matchup. Maybe I'm not playing it well but I dropped from 58% winrate to sub 50 in the last two days.
I love Even Shaman it took me from rank 12 to rank 6 in two days. It is criminally underplayed right now. I have some tech choices I haven’t seen anywhere including Totem Cruncher and Arcane Dynamos. There are so few high level Shaman spells you almost always get the Legendary Stormbringer Spell or Bloodlust! The deck is very good

This. Arcane Dynamo is huuuuge. I expect it to be better than it was during Witchwood, even. It just feels bad right now to play a deck that only includes a few new cards, which I think is a huge problem with this whole expansion given how mech-centric it is. It's hard for older archetypes to integrate these new cards because a lot are so synergy dependent.
It's actually really good, but it's sooooooooooooooooooooooo boring to play. Just another Midrange play-on-curve deck that doesn't require a lot of decisions or brain to play...
In my case, the explanation is that it is a pretty linear Midrange deck, with no particular pepper except Hagatha. Not fast enough, not Control-ish enough, no wombo-combo.
Even if the wr is good, the deck probably lacks some appeal, especially in a new meta with new stuff to experiment with (eg new toys for Bloodlust, Electra or Malygos Shaman)

In my experience the majority of players doesn't care about fun decks, all they care is about winrate and the deck has had a decent winrate for quite some time now.

I played the deck and it is fine, can do well. Hsreplay says that the deck has good winrate too.
Why then I haven't encountered a single even shaman from rank 5 to legend in the last two seasons?
I'm curious, is it just me or the deck is non existent on ladder?

Yeah I didn't see even shaman in a long while. Every time I encounter a shaman, it's mostly shudderwock and rarely token, but not any even deck at all

No idea, I think it's a really solid deck. 75% win rate vs zoo for me. Maybe not many people have Kalimos and Al'akir...
