Why do people use it if it's not an advantage? Even very good players seem to be using it? Knowing your deck can be a bit tricky playing many rounds of arena for obvious reasons. And often, many players like to switch between decks and try out new decks in other modes.
You can also say, "you can just study for a test, bringing in notes would not be an advantage." But what side of the class would you rather be in, the half that can bring notes or the half that can't?
While I understand your metaphor, I think it's more apt if you take it even further. Let's look down the track at those two halves: the half who studied actually learned the material and know it well and now don't need their notes. Those who copied through the exam may have done better in the short term, but now are reliant on notes and learned nothing.
An example in real life is, the reason pros stream without trackers often is to prepare for tournaments where they can't have them, and while after hours of play sometimes they misremember, they get it pretty good. Also worth mentioning, if you're tracking your opponents cards (likely even more important than your own) you're using the same skillset.
A simpler way to put it is "practice makes perfect".
But from the person who posted here, if the functionality simply isn't possible on the platform (and for security reasons I'm really sure you DON'T want them to change it), so there's not much point in worrying about it.
Innkeeper is a desktop program. That person was not really answering your question. You will see above (post #4) that it is probably not possible to run such a program on iOS.
You could have a pencil and paper though. Old fashioned and reliable :)

Again, pen and paper. No more disadvantage :)
