...or have I just been getting extremely lucky with card draws? I've played close to 15 matches with this deck since acquiring Prophet Valen and I've only lost twice.
Murloc Tidehunter, Murloc Raider and Leper Gnome are definitely very bad in a Priest deck. Priest would want to have minions where they can actually heal up after surviving a trade.
Goldshire Footman isn't frequently use. The low health and low attack on it doesn't helps to fulfill any of it's role. You're better off having removals than to play him.
Ironfur Grizzly isn't good in a Priest deck. If you're comfortable with a 3 health minion for 3 mana, you might as well use Injured Blademaster? It have 1 more attack than Grizzly and can potentially be heal up to 7.
Mogu'shan Warden is use mostly in cheesy DS + IF deck. By itself, it is a bad 4 drop that doesn't trade favorably. Against zoo, the 1 attack is not enough to kill most minions. Against control, it is weak against all other 4 drops stats wise.
Gurubashi Berserker is also use mostly in cheesy DS + IF deck. It does have the potential to be buff into a monster. However, the potential to buff him up is not reliable enough and it may cost you your game if it fails. Remember, Stampeding Kodo will kill him outright. In your deck list, I do not see a lot of ways to buff him up. You might as well swap him out for another Stampeding Kodo or Azure Drake.
Lord of Arena isn't fantastic at all. It is a 11 stats minion that will eat up a removal or be traded on your opponent's turn (he gets to decide the favorable trade). You might as well get another Holy Fire (5 heal + 5 damage = 10 stats charger without a body).
Other cards are okay in a Priest deck, some may prefer to take out Mind Control as it eats up a turn. Only good if you can take over a big taunt while you have minions in play, or take over a charger.
Thanks for the responses, everyone. I appreciate the constructive criticism. I'm only rank 18, and the games played that I mentioned in the first post have been a mix of ranked and casual. I had a feeling my luck had been due mostly to card draws and possibly some blunders by my opponents.

What rank are you at? 'Cause that doesn't really look like a great deck...IDK how you got 13 wins with it.
