Personal favourites are Shenhuas theme from Shenmue, Guiles SF2 theme (of course), intro music to the Final Fantasy games, especially FFXI. It wasn't the best Final Fantasy, but it had the best version of that song. The intro music to Shadow of the Colossus. GTA San Andreas' radio picks were OK, but KJah West was perfect. Most of these games were games I played to death, so the songs are ingrained now. I'm not sure how I would feel about any of them if I hadn't heard them so much. Special mention to Kentucky Route Zero who's music I would definitely love whether I had heard it loads or not. Everything about that game is special.

Child of Light from Ubisoft has the most amazing music IMO. Also Deus Ex human revolution has pretty good music, particularly the main theme Icarus.
Every Final Fantasy game ever.
The Witcher games(especially the 3rd one of course) have some pretty amazing OSTs as well.

Chronotrigger and its sequel Chronocross are deservedly almost always cited at the top of best soundtrack lists.
First thing that comes to mind is Diablo 2's soundtrack (Tristram, Wilderness and Rogue Encampment being obvious)
