Fallout New Vegas is an RPG (hold on give it a chance) where your character survives being shot in the head (hey now that's manly) and goes on a revenge quest + does whatever you wanna do (decision making is a characteristic of manly men).
Cooking Mama teaches you practical skills (practicality is manly).
It took a long time for me to think of this list. I need to play more games.

In 2011 I was in New Orleans and was involved in a carjacking. More accurately, I blundered upon a carjacker and got very close to the guy before either of us realized the other was there, and he turned around and shot me in the head.
Fortunately for me, it was a low caliber pistol and my skull ricocheted the bullet. Aside from a severe concussion, it was a fairly nonevent.
Fast forward several years and I'm telling that story to my wife's father. He asked me the caliber of the gun, and when I told him it was probably a 22, he referred to the person who shot me as a pussy and walked away.
So apparently it's only manly if the bullet penetrates.

In regards to the topic, games that nobody else mentioned:
StarCraft: The most competitive strategy game on the market. Playing Terran is of course inherently manly since they are humans with a passion for guns and heavy machinery (most Terran infantry are conscripted from the most violent felons). Protoss are also acceptable being that they are a tribalistic alien race with a warrior caste system. Zerg however are not manly because they are bugs. Bugs are inferior to hmans and must be crushed.
XCOM is also great. You are the commander of a worldwide military alliance and must defend against alien invasion and occupation in turn-based battles. Nothing is more manly than killing things to defend your property.
The Metro Series is also great. It's a post apocalyptic survival shooter taking place in the aftermath of nuclear war between America and Russia. Unlike the open world and RPG focus of a something like Fallout, Metro is more focused on survival mechanics and telling a compelling story. So if you're someone like me who gets bored after a while in open worlds, a shorter, more polished game is great. And of course, it goes without saying that surviving massive explosions is very manly.

When it first came to the US there were only 500 copies circulating and most were at something like a blockbuster (but before the age of blockbuster). It is a one of my all time favorites. The replay and style of the game I’m still a huge fan. Glad to see another rare fan of the game because like you said no one had really ever heard of it.
