The way I see it, she didn’t want the bells to ring. That was Tyrion’s plan, and Danny wasn’t into it, suspicious as she was that everyone was conspiring against her. She wanted to have it her way and accepting surrender was to have Tyrion’s way, a Lanister. I think if you see her snapping as paranoia, it makes much more sense. Burning the city was a mad way of saying « I decide », and al your manoeuvrings to ploy my will have failed. I’m the queen. And thats been part of jer character for a long time: look at me I’m the Queen. That’s what makes her so annoying.

Contrary to people's belief, I don't think Jaime's story is entirely about redemption. I think it's more about addiction. No matter how hard he tried to get away from Cersei, he can't, he is addicted to her. Dying together is fitting imo.
The things we do for love...the sheer stupidity of Jon and Jaime really bothered me. Jon doesn't know his queen for too long, but I really thought Jaime will come to his senses eventually...Well, Jon still has his chance at least.

1. Yes, it would make it helluva more believable to lose her shit GRADUALLY. Not with a switch flip. You want an example of how to progress a character from a good person into a monster - watch Breaking Bad.
2. No, it doesn't make any sense whatsoever. It's once again 7 seasons of character progression thrown into a dumpster fire. Jaime didn't need to become a hero, but he needed to keep the consistency of his character. And his actions in Ep4-5 are complete nonsensical.
This pretty much sums it up. If Dany is meant to go Mad-King on us and be like her father (and with the Wildfire explosions randomly happening in the city for no reason, looks like it), that's fine, but it should have happened gradually over a few seasons. She's arguably one of the two MAIN characters, her downfall cannot be done over the course of just two episodes. Seeing Jaime and the Hound slowly go from evil to good, and Arya go from child to disturbed agent of Death, was interesting and well done because it happened slowly over seasons. You watched as the characters repeatedly had decision to make and over time, their choices changed as they progressed along their path.
Dany, as late as season 7, said "I didn't come here to be queen of the ashes." Yeah, she also liked to burn people you rather she didn't (Sam's father/brother the most notable), but the line was pretty clear. If you bent the knee or were an oppressed innocent, she gave mercy. Refuse, and you die. The line never changed for 7 seasons. It never wavered. She never once thought of killing innocents, and often went against advice just to avoid killing innocents. She f'ing stayed in Essos for /years/ to protect the innocents of the city and stabilize the area, even if it meant delaying the throne longer. Also, if she really went mad, she would have gone straight at Cersei in the tower, not burn every house in the city.
Whatever, it's all pointless talk now. Season is a failure, and the cast knew it. Just watch this:
