Kripp has some good insights on the game, and he ins't too salty - I don't actually watch his stream, since I don't have that much time to spend on it, but I do catch his daily vids which are quite good.
Trump is fun to watch and he seems like a genuinely nice person, so it is really enjoyable to watch him play from time to time, especially for his arena runs. Great player too, although some here will disagree.
Noxious is really fun to watch, but it can get a little too much some times. He isn't much of a ladder player as far as I know, but who cares. Totalbiscuit is kinda fun too in the same category.
Never actually watched the other streams except for Amaz's, who I'm sure is a great player, but whose voice and over-excitement I can hardly stand. No offense of course :(
What I like about Trump is that he explains his thought process, so it's great for new players. I also admire that he does not cuss (he says "gosh" a lot), and maintains a good sportsman-like attitude when winning or losing: I remember watching another individual's stream where the commentary was "this dude is playing such-and-such a card, whatever" and "you lose! Get wrecked". Such snarky attitude is absent in Trump's streams -- he's just a nice guy.

I was watching Sjow the other night, and he said he doesn't like Trump's stream. Because he locks it to subs, and completely ignores it for the most part. I agree. I hate cancer chat, but it doesn't have to be. The likes of Forsen encourage that muck, but its possible to have semi-decent discussion on streams.
I also just plain do not like him, he seems smug, and he's nowhere near as good as people make out.

Kripp is THE KING of salt... He's the saltiest dog on the Hearthstone high seas. He's by far my favourite streamer, so not putting him down but you can't say he's not salty :)
I can't believe no one has mentioned Amaz in terms of entertaining streams. He's so enthusiastic and his reactions to whatever happens is hysterical. He's also, obviously a pretty good player (someone already linked the gosugamers rankings). Educationally Kibler talks a lot on stream, and while he's not the best his talk is very focused on play, which is helpful from a learning perspective.

On EU it has to be Kolento. This guy has maximum luck and always topdecks, which is the only thing that matters in pro games. Remember that Hearthstone is ultimately a game of chance and gamble on the highest level.
I don't know who is the best NA. I mean obviously those architects all have relatively low luck that severely hinders their performance in tournaments. Being a good gambler is much more important, and no one so far is focusing on pure RNG. Well, back when Amaz is the top 1 player, it is his Ragnaros that defines him. Reynad and Strifecro are doomed to be forgotten because they're but architects and not RNG guys.
MY favorite to watch would be Tides Of Time when he streams, which is almost never lately. Does any one know what is going with him and why is not playing/streaming often.
If he isnt on i like watching Reynad for the 20 minutes he streams before he flips his shit and leaves
Lifecoach seems to be the best one, when it comes to ranked mode... he explains everything soo well and you can finally understand why he "ropes" so much during the tournaments ^^
I don't watch much twitch, but when I do, I prefer watching arena. And when it comes to arena players, I like Hafu best, so she tends to be the one I watch most, in the rare instances I watch anything.
Strifecro is in a slump lately, but prior to the last three months he was winning tournaments consistently from closed beta onwards. Lately Kolento and Lifecoach has been winning on a more consistent basis.
Kolento on the other hand went through a slump post GvG release. Lifecoach recently had a long winning streak, if you watched that you would see he made a lot of second best plays lulling opponents into a false sense of security. This made people belief he did not have the best cards in hand and then catching them off guard.
Whenever someone starts dominating, people watch the VOD's and adjust. That is why someone wins a couple tournaments in a row and then go on a losing streak. The reason the above mentioned trio is in most of the top 3 lists are because over time they have made the most adjustments to reach the top multiple times.

i like bmkibler and lifecoach, they both talk a lot about the game and are cool guys, which is what i look for when i watch a hearthstone stream.

I used to watch Tides. He turned into a right try-hard over time though. And just went to crap since he left TS. I think he's a bit of a lost puppy.
