I think the point of the quests is that they dont force players to play suboptimally. Every quest can be finished using normal decks.
your quests require specific card card and variables. Is there a way you can make them less brutal? For instance, a new player can never finish most, if not all, of these quests.

Since Blizz seems to be willing to add new one-time quests into the game, I wanted to think up some cool things to work towards in-game!

See how I call them Achievements, as in the hidden one-time only things? yeah, missing that detail is understandable.
