The problem is that that match making is simply, competely, entirely broken. You will be matched up with legend rank players with full card sets even if you've only opend 5-10 packs. It's why I quit in the first place. Came back a bit ago thanks to some very valuable information to make it worth playing again and I wanted to play the Nax stuff.
I literally can't even make a zoo deck, a proper Rogue or Hunter deck at all or the first "F2P" deck in the "HearthPwn's F2P Naxx Boss Kills Normal/Heroic" topic. I have never been above rank 25, I have one single star total. I don't even have a different card back. Four of the classes I only have a single rare for. I have 5 epics and 2 legendaries, one of those is Norzdomu. (Well, 3 now after clearing Nax.) Don't even have an Iron Beak Owl, I'm totally screwed in about a month. Just the other day I dusted a couple of things to get a rare for a shenanigan and didn't even have the commons that combo with it. Yet I've had to play oppoents that made it to legend and people I know to have full sets of cards. It was pretty much impossible to progress unless I picked a mage but that just felt like cheating. Now it appears they're further staggering potential progress with this http://www.hearthpwn.com/forums/hearthstone-general/general-discussion/15505-rating-requierements-for-gold and I'm still running up against that stuff with my 5% win rate. I also don't think I've played anyone that didn't have a different card back so I'm always playing people at least 5 ranks above me. Since I've run into people with the legend rank cards backs I'm playing people that are at least 20 ranks above me, maybe even the full 24. Does that sound like a good match to you? It doesn't to me!
Then if it doesn't match me with some pro player with all the cards I get someone that has no clue what they're doing. Like that Rogue that backstabbed a Shield Barer turn one against a Priest then went coin/eviserate on it the next turn. I've also won with a deck where the minions consisted of 1x Mana Wyrm, 1x Shield Barer, 2x Goldshire Footman, 2x Sorcerer's Apprentice and 2x Frostwolf Grunt. No, I don't have a Pyroblast either.

DON'T PLAY UNRANKED MODE THEN.
The only way it is even physically possible for someone who has made legend to be matched against you in Ranked is if they made legend one month, didn't even log in next month, and then played you the month after.
And any legend player in that situation is going to fly out of the restricted 25-21 ranks in, literally, a handful of games. The chances of you meeting them on the way are tiny. The chances of this happening to you repeatedly are astronomically small.
I have the feeling that is thread is just another whine post about losing - most people have the feeling "I am as good as the pro players , i understand the game, but those retards use OP 12K Dust decks so it's impossible for me to win".
This attitude acutally displays how bad people are. Blizzard did the ranking system quite smart in my opinion.
If you want to play for legend or in legend ---> go for it, use the meta decks you find online and get better with them and compete. (I think that from rank 5 on it's really competitive if you take into consideration that 90% of the players are no fulltime streamers)
If you want to farm your pics you can just win games, concede 10 times and farm again on high ranks - nobody cares about that if you enjoy that kind of play.
If you want to "have fun" then go to casual, try the gimmicky decks you like and accept your opponent. The other guy perhaps tries to learn miracle and would like to play a zoo and will be just as upset as you are when he sees your turn 3 Deathwing whatever!
I didn't really read this whole thread, just wanted to post my own thoughts. Sorry if I'm just repeating everyone here.
I go to casual for a few matches when I want to test a new deck. For example, I have never yet played miracle rogue, but if I want to in the future, you can bet I'm going to try 3-5 matches in casual first, just to make sure I get the hang of it. It's the same with all popular decks, just the same as test decks.
Also, if I want to quickly do a daily, I feel better testing powerful decks from the meta in casual, then completely jumping head first without any prior practice into ranked. And don't tell me to practice against AI haha, we all know how terrible they are. Also, I still like experience on all my classes.

The more limitations on match-ups the longing queuing times which would cause WAY more complaints - so it won't happen
I wasn't talking about limitation, I said it would prioritize. That means if it can't find a player who fits into the criteriea within a certain time, it would do a general match-up. The real downside would be the Blizz's servers would have to pass more bandwidth.
I agree with those who think casual is fine as it is. The issue with the op is that casual is not a good way to build up a new account. I think arena would be the best way to to this, but that is another topic.
I think the problem is matchmaking in both ranked and casual is very unfriendly to new players trying to build their card collection. I think if the ranked system were tweaked a bit, it could prevent the severe mismatches that sometimes occur. Currently, unless they lose every time (and there is no hope for those people), anyone will eventually get to rank 20. The problem occurs because there are too many people who can't (or won't) advance beyond rank 20. So you end up with the new player who may have a few common cards going against a rank 20 with multiple epic/legendaries. So progressing under the ranked system is tough and eventually they try casual if they don't like or can't afford arena.
What if the can't lose stars system were scaled so that the rank where you don't lose stars is based on the total dust value of the player's card collection? So a new player with no craftable cards wouldn't lose stars at rank 25. Then add a step system where you don't lose stars if less than 1000 dust doesn't lose stars at rank 24, 2000 dust doesn't lose stars at rank 23 etc. I haven't thought out the dust values, but the idea is the better or more experienced (or rich I suppose) players will gravitate to different ranks rather than a mass # of people at rank 20ish. This should help keep the people with really good decks from farming complete noobies for the quests in ranked mode. This should encourage new players to keep playing in ranked as they will usually be matched with other players with similar deck collections.
Seriously I am curious as to why this is. It is annoying, maybe that is why people do it. I certainly can see the troll factor in doing it, but not sure why else people would feel the need to torture people trying new deck ideas, or trying to get daily quests done.

I've often thought the same thing, but I actually appreciate the people that do it. What's the goal of a new deck? To beat other decks, right? Is Zoo not one of the most popular on ladder? It absolutely is, so you're really getting a great idea of how your deck is going to match up against the meta. It's annoying sometimes for sure, but it's giving you a really good idea of how the deck can actually performs where it counts.
Ok so I must be the only one constantly getting the class specific ones that never include zoo. I could see it being a few decks, but over 50% of games makes me think it isn't just for questing.

There are actually quite a few daily quests that can easily and quickly be accomplished with a fast zoo deck:
Priest or Warlock Victory Priest or Warlock Dominance Shaman or Warlock Victory Shaman or Warlock Dominance The Meek Shall Inherit Beat Down Total Dominance 3 Victories!
Any time I get any of these, I fire up a basic zoo deck in casual so that I can earn the gold asap.
If it is a class I am laddering with, or a generic quest, then yea I'll play ranked. It is just frustrating because even if you play a zoo counter, it still takes a good draw and they ALWAYS have a good draw.

Probably because Zoo is by far the most bang for your buck. Everyone should have a Zoo deck, there's really no excuse, even if you don't want to play it you should because you have to learn the match up.
Now for the reason why they're playing it, probably practice, I'd bet it's the most common deck, everyone needs practice and no one wants to risk their stars.

Fair enough could work
There are people that want to test new decks. That can explain why you meet players with top tier cards.
I am one of those, I do not play ranked with a new deck.
Sorry about my English, doing my best.

I do it to get my dailies done quickly. Win or lose they are fast games. Sorry I'm not sorry.
Now this D bagging zoo player is taking the entire time to play his zoo deck, so no it doesn't make my dailies faster.
